It’s snowing again…I am starting to think I live in North Dakota and not southern Indiana. But to my kid’s delight, school was cancelled. And of course Thursday is the day I am a bit skinny on help when school is cancelled. Working mom is at home today.
I decided to take advantage of this by making the kids a homemade breakfast. Well, semi-homemade breakfast.
The kids picked waffles…banana waffles is what I decided to make.
When I have bananas getting over ripe, I puree them and throw them in the freezer. I put 1/2 cup portions in freezer bags.
A quick pop under some hot water will thaw it out in a matter of minutes.
While I have made waffles from scratch, I use mixes most of the time and then doctor them up.
I pretty much follow the recipe on the back of the package.
I combine the mix and water. When I am adding puree, I reduce the water by a quarter of a cup and only use half the oil.
I then add a 1/2 teaspoon of cinnamon and 1/2 teaspoon of vanilla.
Make sure you grease your waffle griddle after each waffle.
Kid tested and mother approved!
While the whip cream is tasty, I prefer some good old maple syrup on mine.
What ways do you make your everyday foods a bit more healthy?

This looks like a great breakfast. I love bananas, though I think I'd prefer maple syrup instead of the whipped cream too. I'm starting a new linky on my blog this Saturday called "Sweets for a Saturday." I'd like to invite you to come by then and link this up.
I have a stack of your Snow Day Banana Waffles on my plate, they look so good I can't wait to try them. Thank you so much for coming to Full Plate Thursday and please come back!
Excellent recipe! Snow days require special food. I am in central KY and we are now on our 8th snow day of the season. Crazy
All the snow happening all over the country the past few weeks has been crazy! As I live in upstate NY Im quite used to it- but I know my family from Atlanta was in shock a few weeks ago when they were stuck at home snowed in for an entire week!
Anyways..
This recipe looks awesome! Wanted to invite you to link it up at an event I host each week titled "Seasonal Sundays" AS it fits the theme nicely as you used bananas!
ps. Great Blog you have
Looks delicious!! I'd love for you to stop by What's Cooking Wednesday (linkups every Tuesday evening) to share one of your fabulous recipes! Hope to see you there
