Microwave scrambled eggs in 1 minute is a perfect protein-based breakfast for people needing a breakfast quick and on the go, a bonus is that it is low-carb, too. Mornings are not fun in our house. No one is a morning person. So when it comes to breakfast, we just hope we remember to eat. We have lived on pop-tarts and baggies filled with dry cereal. With the kids in school, I really want them to eat a hot breakfast. That amounted to a breakfast of corn dogs and sausage biscuits. The kids wanted eggs, so I needed to be cooking eggs in the microwave. I had to figure out how to microwave scrambled eggs in 1 minute!
Do any of your kids want to eat scrambled eggs for breakfast? But you don't have time to stand over the stove to make them, right? Yeah, been there, done that. I have to get ready to walk out the door, too. I think I made him eggs on his first day of school. Want an extra kick of protein? Try the microwave cottage cheese egg bites or make a dozen high-protein egg muffins ahead of time.
Then I thought surely there is a way to make them in the microwave. And there is!
I bring you the 1 minute scrambled egg.
How to Microwave Scrambled Eggs in 1 Minute
Start by spraying a microwave-safe coffee mug with cooking spray. You want a fairly large coffee mug. The crack two eggs into the mug.
Add your seasonings of choice. I put some Lawry's seasoning on the eggs and scrambled.
I have added a splash of water, but it isn't necessary. Then pop the cup in the microwave for 30 seconds.
When you pull the cup back out, the top will be cooked, but don't be fooled. Give the eggs a quick stir with a fork. Season with salt and pepper. Go ahead and add cheese if you are cheese person. I have used one-ounce slices of cheese as well as shredded cheese. Both work great. Get the cheese stirred in.
Pop it back in the microwave for another 30 seconds. This time when you pull the cup out, the eggs will be almost completely cooked.
Give it another quick stir to make sure there isn't any liquid remaining in large amounts. If the cheese isn't completely melted, give it another 10 seconds to melt the cheese and make the eggs a bit more solid. And then VOILA!
These microwave eggs are perfect on an egg sandwich are just by themself. The eggs are fluffy, yet held together thanks to the mug.
