I mentioned earlier this week that I am in love with the soon to be released Gooseberry Patch 101 Soups, Salads & Sandwiches cookbook. It is my new weeknight quick meal solution. I am betting that I make every single recipe in this book over the next couple of months. Love it.

The first soup I made was tomato-ravioli soup. This was a great change up if you are one night a week spaghetti family.
Loved it. The neighbors were over too, and they gave a thumbs up too!
For lunch one day this week, I threw together the chicken enchilada soup. Yummo! Supper easy too.
It cooked itself so to speak. It simmers on the stovetop for about an hour. I think this one could easity be adapted to the crock pot.
My finally recipe was a salad recipe. I love taco salad. This version had pasta in it. I was so intrigued, I had to try it. I am not sure I will ever make it without pasta now!
I add the chips to each individual salad so I could eat it again with out the soggy chips. Have I mentioned I love this cookbook.
Did you notice anything else all these recipes had in common. Yep, my trusty micro cooker. Makes these recipes that much faster.
