101 Cozy Casseroles is one of my favorite cookbooks I have had from Gooseberry Patch. If you are looking for kid-friendly, easy to make casseroles, this might be the cookbook for you!

Earlier this week you may have seen the ravioli lasagna I made out of the casserole. It is going to become a go-to quick meal at our house.

Baked Ravioli LasagnaI also made a new variation to an old favorite. Green Bean Delight was a great change to the traditional green bean casserole by adding almonds and cheese.

Green bean delight casseroleI have found a chicken recipe my husband enjoys!! It is a miracle. Thanks to Maggie’s Kickin’ King Ranch Chicken Casserole. While, I made half the recipe opposed to the full recipe, it was supper easy, especially since I used a rotisserie chicken instead of cooking my own.

    I’m back to work after being home raising my kids for 28 years. I’m thankful for being able to be a stay at home but man is it hard to adjust to my new lifestyle! This cookbook will help with the huge issue of “What’s for dinner Mom”.

    I absolutely LOVE Gooseberry’s Loaded Mashed Potato Casserole. In fact- we just had it last night. It’s easy to make and you can prep it ahead so that you can just throw it in the oven when its time! We bring it all the time to potlucks!

    My family’s favorite casserole is made with hamburger, pork & beans, tomato sauce and topped with biscuits. My mom always called it “Poor Man’s Casserole”. My husband and sons especially like it and there are never left overs.

      When I read the ravioli lasagna recipe, I shared it with my family. We made it for dinner on Sunday. I added extra cheese and made my own homemade sauce and it was mighty tasty according to the family. Will definitely make it again.

    most of my fave recipes are casseroles b/c they are so easy to make and reheat. I really love my slimmed down buffalo chicken and loaded potato casserole ;)

    Tuna Casserole is one of my favorites, but after seeing the Kickin’King Ranch Chicken Casserole that you made, i have a feelin’ that’s going to change!!!!     I don’t eat meat so my favorite casserole obviously is one without it. =) I love casseroles in general but my favorite is probably a cheesy potato casserole.

    My favorite casserole is Rueben Casserole with noodles, sour kraut, thin sliced corned beef, and swiss cheese, Yum!!

    I love casseroles in general but one of my favorite and easiest and my family’s favorite is Crescent Roll Casserole. The crescent rolls go on the bottom and the top and a mixture of hamburger and spaghetti sauce go in and then top that with a lot of cheese. We never go wrong with that one!
