Slow Cooker Zesty Italian Pot Roast

Slow Cooker Zesty Italian Pot Roast

An easy traditional pot roast made with a few non-traditional ingredients that make it a zesty Italian pot roast.

Ingredients

  • 2.5 pound beef roast (chuck, arm, rump)
  • 4 potatoes, quartered and peeled if so desired
  • 2 cups baby carrots
  • 1 stalk celery cut into 1 inch chunks
  • 1/2 teaspoon pepper and salt
  • 1, 14.5 ounce can of tomatoes
  • 1/2 teaspoon Italian herb seasoning
  • 1/4 cup water

Instructions

  1. Place raw vegetables in the bottom of the crock pot and sprinkle with salt and pepper.
  2. Set beef roast on top of vegetables followed by tomatoes and Italian seasonings. Pour water over top.
  3. Cook on low for 8-10 hours.
  4. Slice pot roast and serve with vegetables.
  5. Thicken remaining juices with flour or corn starch.

  1. I call it a BBQ pot roast. Marinate the roast overnight in root beer and a little liquid smoke. Transfer the meat and juice into the crock pot the following morning and let it cook all day. That evening, I separate the juice and meat, the cats get the juice and we add some bbq sauce to the meat and it’s yummy! If my memory serves me right, I got that recipe from you!

  5. Oh, that roast looks so good! One simple crockpot recipe that my grandkids really go for is the one for chicken tacos.
    Really it is a method more than a recipe. I use boneless chicken breasts, my own low sodium taco seasoning mixture, salsa. Once the chicken is done and shredded I often add black beans. Serve with favorite taco fixings.

    Chicken Soup (noodleless)
    3 frozen chicken breasts
    16 oz bag of baby carrots
    2 stalks of celery
    1 tbsp of chicken base
    4 cups of water
    Spices of your choice
    I use sage, garlic, onion, and basil. Sometimes I add pesto instead. Cook on high in the crockpot for 4-5 hours, depending on how tender you like your carrots.

    Pork loin

    Rub with olive oil, season with salt & pepper. Cook on low 6-7 hours or if frozen 10-12 hours. I make a BBQ sauce by mixing a homemade a1 sauce, honey, & a bottled BBQ sauce, heat in microwave and pour over sliced pork.
