Chipotle Shredded Beef Chili

We love chili at our house. The problem is that I can never make the same batch of chili twice. I am notorious for not being able to duplicate a meal. And this chipotle shredded beef recipe is going to need duplicating so I am here to document the recipe.

I am all about cooking once and eating twice. The chipotle shredded beef I made for beef sandwiches worked perfectly in this chili. And already had the slow cooked big flavor to help make the chili taste like it simmered all day when only it was ready in 30 minutes. I am telling you, cook once, eat twice is the key to great weeknight meals.

To help give chili the smoky flavor I like, I always, always start with bacon. That’s right bacon. I cut up four to five slices of bacon and fry it in the bottom of my stock pot. I remove the bacon once it is crisp leaving the bacon grease in the pan for the holy trinity of chili to be fried up in it. What is the holy trinity you ask? Well, simply onion, green pepper, and garlic. All diced, of course. Once they just start to get soft, I added the leftover chipotle shredded beef. And stirred till combined and the meat was warmed up.

Bacon is the key to a good Chili Base along with onions, green peppers and garlicWhen the beef is warmed up, start adding the liquids. I added both sauce and canned tomatoes. For me, I add petite diced tomatoes. If I would have had fire-roasted diced tomatoes, I would have added those. But I didn’t have them on hand. I also added baked beans instead of chili beans. I used mesquite thinking it would really add a punch of flavor. I added salt, pepper and chili powder also. I used the chili 3000 from Penzey’s.

Then add the remaining bacon and let it simmer till you are ready to eat. I let it simmer about 15 minutes. I was honestly waiting on the cornbread to bake. I got the chili done faster than I could whip together a pan of cornbread. And it was all amazing. We will definitely be making this again.

Chipotle Shredded Beef Chili

Chipotle Shredded Beef Chili

Ingredients

  • 5 slices of bacon, fried and crumbled
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 garlic cloves, diced
  • 3 cups Shredded Chipotle Beef
  • 1 can tomato sauce, 15 oz can
  • 1 can diced tomatoes, 15 oz can
  • 1 can of baked beans, 15 oz can
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 to 2 teaspoons chili powder (taste for heat preference)
  • Serve with cornbread and top with onions, shredded cheese, sour cream or your normal chili toppings.

Instructions

  1. Fry bacon in the stock pot you plan on making your chili. I cut the bacon into pieces before frying. Remove once it is crisp leaving grease in pan.
  2. Add onion, green pepper and garlic to bacon grease. Cook for 2 to 3 minutes or until the peppers begin to just be soft.
  3. Add the shredded beef to the vegetables in bacon grease. Stir to combine and cook till meat is no longer cold if using leftover meat.
  4. Pour tomato sauce, diced tomatoes and beans to pot. Add reserve bacon to the chili. Stir to combine. Season with salt and pepper. Add chili powder tasting for heat as you add a little at a time.
  5. Simmer for 15 minutes or until ready to eat.

Crock Pot Chipotle Shredded Beef

Naturally when I am reviewing a new cookbook I am drawn to the Mexican inspired recipes. When the recipe includes a beef roast and a crock pot, I am sold. Gonna try the recipe. This crock pot chipotle shredded beef did not disappoint anyone in the family.

slow cooked chipotle shredded beefThe recipe called for a chuck roast, but here is the deal, use whatever beef roast you have on hand or is on sale at the grocery story. It will all work the same. Place the beautiful beef roast in the crock pot.

The original recipe called for cans of diced tomatoes, green chiles and chipotle sauce. I however had enchilada sauce instead of chipotle. It also called for chili powder and cumin. I had Penzey’s Chili 9000 which has cumin and other yummy seasonings and herbs. So, I used two tablespoons of it instead. Topped the roast with sliced onions and the canned goods before letting it slow cook all day. I omitted the beef broth the recipe called for originally.

After it has slow cooked all day, you should be able to peel any excess fat off the roast and then shred with two forks. Don’t trim the fat before cooking. Remember fat is the flavor conductor. You want it to cook with the meat all day to add flavor.

 The meat should be fairly juicy. Which made me relieved that I didn’t add the two cups of beef broth. You will get quite a bit of beef. This is a great recipe to eat twice.

The cooked meat will freeze nicely to pull out later or go ahead and make some beef enchiladas and use the meat for tacos or on top of Mexican Risotto.

Slow Cooked Chipotle Shredded Beef

Ingredients

  • 2-1/2 lb. beef chuck roast, trimmed
  • 14-oz. can diced tomatoes
  • 7-oz. can chipotle sauce or medium red enchilada sauce
  • 4-oz. can diced green chiles
  • 1 onion, slice
  • 2 T. chili 9000 from Penzey's or 2 T chili powder and 1 t. cumin

Instructions

  1. Place roast in a slow cooker. Top with remaining ingredients. Cover and cook on low setting for 8 to 10 hours.
  2. Once it is completely cooked, remove any excess fat. With 2 forks, shred the beef roast in slow cooker. Add beef broth if there is not much liquid.
  3. Serve on tortillas with favorite taco toppings, on a bed of lettuce for a salad or in a bowl with Mexican rice.

Slow Cooker Zesty Italian Pot Roast

Slow Cooker Zesty Italian Pot Roast

An easy traditional pot roast made with a few non-traditional ingredients that make it a zesty Italian pot roast.

Ingredients

  • 2.5 pound beef roast (chuck, arm, rump)
  • 4 potatoes, quartered and peeled if so desired
  • 2 cups baby carrots
  • 1 stalk celery cut into 1 inch chunks
  • 1/2 teaspoon pepper and salt
  • 1, 14.5 ounce can of tomatoes
  • 1/2 teaspoon Italian herb seasoning
  • 1/4 cup water

Instructions

  1. Place raw vegetables in the bottom of the crock pot and sprinkle with salt and pepper.
  2. Set beef roast on top of vegetables followed by tomatoes and Italian seasonings. Pour water over top.
  3. Cook on low for 8-10 hours.
  4. Slice pot roast and serve with vegetables.
  5. Thicken remaining juices with flour or corn starch.

Quick Spicy Beef Burritos

We can all pretend that we are always ready to whip up a meal for our starving kids. But, after being on the road or on a plane for a month straight, I would rather everyone just make peanut butter and jelly sandwiches.

When I came across the recipe for quick spicy beef burritos in my latest Gooseberry Patch Cookbook I am reviewing on the way home from a week on the beach, I knew even my kicking and screaming bad attitude towards cooking right now could handle it.

Of course, I always have literally hundreds of pounds of meat just laying around in one of my two chest freezers. I get the frozen pound of ground beef going with a quarter cup of diced onions.

Quick Spicy Beef Burritos

Lovers of Tex-Mex food looking for a change of pace from regular tacos will fall in love with these quick spicy beef burritos.

Ingredients

  • 1 lb. lean ground beef
  • 1/4 c. diced onion
  • 1-1/4 ounce package of taco seasoning
  • 16 ounce can refried beans
  • 10 ounce can of diced tomatoes and green chilies
  • Flour or corn tortillas
  • 1 cup shredded cheese

Instructions

  1. In a skillet over medium heat, brown beef with onion.
  2. Drain off any excess grease and stir in the taco seasoning, beans and tomatoes and chilies. Simmer for five minutes, stirring occasionally.
  3. Warm up flour tortillas or crisp up corn tortillas and fill with beef filling.
  4. Sprinkle with cheese and then roll up and serve immediately.

Day 2 of #FarmsMatter: Farmers ate local before local was cool

Sometimes when I am alone driving with 800 pounds of beef like I was today after picking up the beef we bought from my brother, I think about how I have bought beef at the grocery store less than five times in my life. Just in case 800 pounds of beef is hard to imagine, it is 12 banana boxes of beef like seen here in the back of the Odyssey.

So, when people suddenly have this new found interest in buying local and direct from the farm and rave about how great the meat is, farmers are sort of dumbfounded. Because we have always ate this beef. Or pork. Or lamb. Or chicken. And this is the same meat we also sell to companies and stores that sell the meat to you in Wal-Mart or Kroger or Piggy Wiggly.

grocery store meat sectionThere is something romantic about white butcher paper wrapped around meat. But besides the packaging, the other big difference is the customization of buying direct. You can have your beef cut to your liking. Steaks an inch and half thick hamburger 93% lean and cube steaks 4, 6, or 8 to a package. But, you need to talk butcher language.

butcher cut sheetSo, while the customization is awesome and the flavor is superior there is a downside. It requires freezer space if you want to capitalize on the better price as well.

freezer full of beef and cornThe space in the refrigerator freezer isn’t going to cut it my friends. And it is rare to get the meat not frozen. Fresh meat direct from farmers is a rarity. Some farmers in some markets can ale it fast enough but most cannot. And frozen meat is another normal, everyday thing for farm people. While thawing meat is pain, it is just part of cooking for a lot of us. But, if you don’t have freezer space, don’t want to deal with thawing out meat, be confident the meat at the grocery store also came from a farmer that is eating the same beef that is on the grocery store shelf.

Hunk of Meat Monday: Slow Cooker French Onion Swiss Steak

We all have the that swiss steak recipe that has been in our family for four generation. Onions and peppers and tomatoes all cooking slowly together. Well, sometimes I like to break tradition. And I have a lot of round steaks and steaks for swissing. So, I tried something new. French Onion soup inspired swiss steak.slow cooker french onion swiss steak I started with the cast iron skillet and ended with my crock pot.

swiss steaks and onionsFlour and steak seasoning. Butter and onions. This was a match made in heaven. The you just need to slow cook the beef to make it super tender.

But first, the gravy French onion goodness.

French onion cream sauceSimply mix a can of French onion soup and a can of cream of mushroom soup together. Pour over top of the steak and season generously with your favorite steak seasoning. And then before you are ready to eat, whip up some mashed potatoes. Or cook some noodles. Or do both. You will want to soak up the gravy.

Slow Cooker French Onion Swiss Steak

Slow Cooker French Onion Swiss Steak

A creamy, French onion soup inspired variation of slow cooked Swiss Steaks.

Ingredients

  • 2 pounds round steak or steak for swissing
  • 1/2 cup flour
  • 2 tablespoons steak seasoning
  • 2 tablespoons butter
  • 1 onion, sliced
  • 1 can French onion soup
  • 1 can cream of mushroom soup

Instructions

  1. Melt butter in a large skillet over medium-high heat.
  2. Mix together flour and one tablespoon steak seasoning. Dredge steak in flour. Place steaks in hot skillet. Brown on both sides for 3-4 minutes.
  3. Once both sides are browned, place in crock pot on a quarter of the sliced onions.
  4. Place remaining onions in skillet to absorb bits left in the pan for a minute or two and then transfer to crock pot.
  5. Mix soups together and pour over meat and onions. Sprinkle remaining tablespoon of steak seasoning over the soups.

Stew Meat Chili

There are 1,001 ways to make chili. It seems everyone has there special way to make chili. They use beans or they don’t put in any beans. Here in Indiana they put in spaghetti or macaroni. Some people use all beef while others use all pork and other mix it. But, here my friends is stew meat chili.stew meat chili

And the other secret to my chili…bacon. Lots of bacon.

Once the bacon is fried, remove the bacon from the pan and then put in the holy trinity. The onions, peppers, and garlic. Those three things fit together just like the Father, son, and holy ghost. You can’t ever have one without the other two in chili.

holy trinity of chiliSo, now back to the stew meat. I always have items that fall to the bottom of the freezer when we starting going through a half a beef. Stew meat is one of those items.

Stew meat for chiliOnce the holy trinity has softened, stir the stew meat into the mix.

seasoned stew meatAnd people, season that meat. Season it with herbs, chili powder, more garlic. Whatever you like in your chili! And then get your beer on. Yes, your beer, chili seasoning and bacon. Oh and tomatoes too.

stew meat chili magicAnd then let it simmer. For an hour. Or for two hours. Just keep an eye on the liquid. If it seems to be getting too thick for your liking add some water.

pot of chiliAnd then top with your favorite toppings. Sour cream. Cheese. Mustard. Chili Powder. Peppers. Get your chili on!!

Stew Meat Chili

With the on set of colder weather, one of the first things that comes to mind for comfort is soup. And this stew meat chili is guaranteed to warm you up!

Ingredients

  • 6 slices of bacon
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 lbs stew meat
  • 1 bottle of beer or 2 cups beef broth
  • 1, 28 ounce can crushed tomatoes
  • 1, 10 ounce can rotel
  • 1, 14.5 ounce can diced tomatoes
  • 3 tablespoons chili seasoning

Instructions

  1. Fry bacon in the bottom of a large stock pot. Once crisp, remove and reserve for later leaving grease in pot.
  2. Add garlic, onions, peppers to bacon grease and saute till softened.
  3. Stir stew meat into sauted veggies. Add a chili powder to begin getting the heat going. Brown the edges of the meat just slightly for some caramelization flavor.
  4. Pour the beer over top of the stew meat and let braise for 20-30 minutes.
  5. When meat is tender and juices run clear, add canned tomato products. Add three tablespoons of chili seasoning and bacon reserved earlier.
  6. Let simmer for at least an hour. If meat doesn't fall apart use a knife or salad chopper to shred.
  7. Serve with your favorite toppings.

The Secret to Quick Meals on Busy Nights

You know when you have a way to save time in the kitchen, but don’t yell it from the the mountaintops because you think your friends already know it? Well, that happened to me recently. A few of us were sitting around when one of my friends said “Thank goodness someone told me about Leah’s secret of making browned meat from frozen meat in seven minutes in the microwave.” Which was no big deal until another friend said, “Yeah, and I am also glad she told me how to cook pasta in the microwave.”

Blank stares from those who most not know about my secrets. My secret weapon more specifically.

It’s a simple little thing.

microwaving ground meatOn the nights when you have to literally throw dinner together in 15 minutes because you have soccer or ballet or chores or cross country or corn to harvest or just no energy. You need a secret weapon.

how to microwave pastaYou can microwave ground meat that is froze solid in two increments of three and a half minutes that result in browned meat.

how to microwave meatViola. Add seasoning for tacos or taco salad. Pour into spaghetti sauce for a quick spaghetti meal.

But you are still wondering on how to microwave pasta aren’t you? There is a small are to the pasta. I normally do a cup and a half of water and pasta into the large micro cooker. For most pasta I just double the cook time. So, if it takes 5-6 minutes to boil to al dente, I cook on high in the microwave for 11 minutes.

microwaved cooked pastaMost times the pasta will absorb all the water, but if not go ahead and dump the extra water out before adding the cheese, milk and butter for mac and cheese. I mean, after all what else do you make with pasta?

Microwave Mac and Cheese

Microwave Mac and Cheese

A one dish mac and cheese dish that can be made in 15 minutes in the microwave.

Ingredients

  • 1.5 cups uncooked pasta
  • 1.5 cups water
  • 2 tablespoons butter
  • 1/3 cup milk
  • 4-8 ounces of velveeta, cubed or shredded
  • salt and pepper
  • Crumbled bacon

Instructions

  1. Place pasta and water in micro cooker and cook for 4-5 minutes longer than the box stated boil time on high. Check pasta and cook longer if not cooked to al dente. Add more water if necessary.
  2. Drain any excess water. Add butter, milk and cheese and microwave in 30 second increments till cheese is melted.
  3. Add salt and pepper to your taste. Serve with crumbled bacon on top.
