April's Barbecue Chicken

April's Barbecue Chicken

This is a juicy grilled chicken recipe with an easy homemade barbecue sauce.

Ingredients

  • 3 lbs chicken or chicken pieces
  • 1 T. plus 1 t. garlic powder, divided
  • 1 1/2 t. onion powder, divided
  • 2 c. ketchup
  • 1 to 2 c. brown sugar, packed and divided
  • 1/2 t. dry mustard
  • 1/2 t. chili powder
  • 1 t. liquid smoke

Instructions

  1. In a large stock pot, place chicken and cover with water, one tablespoon garlic powder and one teaspoon of onion powder. Cook on medium-high heat till the pot comes to a boil. Reduce heat, cover and simmer for 15 minutes.
  2. While chicken is cooking, combine ketchup, one cup brown sugar, mustard, chili powder and remaining garlic and onion powders in a small sauce pan over medium heat. Simmer for 15 minutes adding liquid smoke and remaining brown sugar to your taste.
  3. Once chicken has simmered, place on medium-high heated grill. Grill for 30-40 minutes or till chicken reaches an internal temp of 165. Baste with barbecue sauce as it grills.

Slow Cooker Zesty Italian Pot Roast

Slow Cooker Zesty Italian Pot Roast

An easy traditional pot roast made with a few non-traditional ingredients that make it a zesty Italian pot roast.

Ingredients

  • 2.5 pound beef roast (chuck, arm, rump)
  • 4 potatoes, quartered and peeled if so desired
  • 2 cups baby carrots
  • 1 stalk celery cut into 1 inch chunks
  • 1/2 teaspoon pepper and salt
  • 1, 14.5 ounce can of tomatoes
  • 1/2 teaspoon Italian herb seasoning
  • 1/4 cup water

Instructions

  1. Place raw vegetables in the bottom of the crock pot and sprinkle with salt and pepper.
  2. Set beef roast on top of vegetables followed by tomatoes and Italian seasonings. Pour water over top.
  3. Cook on low for 8-10 hours.
  4. Slice pot roast and serve with vegetables.
  5. Thicken remaining juices with flour or corn starch.

Del Monte Can Creation Giveway Featuring Warm Green Bean Potato Salad

The fine folks over to Del Monte sent me a welcomed package after just moving to our new house. A big box of canned goods! While I love fresh and frozen vegetables, the convenience of canned vegetables leaves me coming back to them. So, when we had friends over for steak dinner grill night, the canned veggies came in handy. And a great bottle of wine!

wine connoisseurWhen we grill steak, the steak ends up taking up the majority of the steak. Makes having baked potatoes difficult. Makes fitting veggies in hard too. I did a little searching for a new, easy way to combine the potatoes and veggies and settled on a warm green bean potato salad.

While the steaks went on the grill, I added the red potatoes cut into quarters, peeled and smashed a few garlic and covered them with garlic. At the same time I fried up some bacon in a large cast iron skillet. Once the potatoes were soft, I tossed them over in to the skillet with bacon grease to crisp up and then transferred them to a separate serving dish. Once the steaks were ready to be pulled from the grill, I drained two cans of green beans and poured them into the same bacon laden skillet to fry up.

The great thing about canned veggies, they cook quick and are ready just in time. Plus, they are canned at their peak of ripeness. Right before I transferred the beans to the pan the potatoes were in, I squeezed some lemon juice over top.

lemon juice over friend green beansWhat makes anything good, great? BACoN!!! Be sure to sprinkle plenty of that bacon over top of the potato salad.

I am not sure how people function without a crock pot. Let’s be honest, I am not sure how people function with just one crock pot. I have several. Cabinets full of small ones and large ones and medium ones and oval ones and round ones and digital timer ones. I have a broken one too. Imagine my horror when my friend, Jent, informed me she doesn’t own a crock pot. So, I guess she won’t be needing this Slow Cooking All Year ‘Round Cookbook. But I know you all do!!

It is broken down into four main chapters that follow the seasons to help all of us utilize what we have in season. Each chapter includes breakfasts, appetizers, main dishes , sides and even desserts. And luckily it also has an index to help this girl find the right recipe by type of food.

So far I have made a spicy shredded beef for tostadas that of course got my attention when I saw a can of chipotles peppers in adobo sauce in the ingredients.

Slow cooked spicy beefIn the matter of one meal, we were able to form several different creations with the spicy beef. We even topped it on our Mexican mashed potatoes.

And the creamy macaroni and cheese recipe is the perfect recipe for a family on the go all the time. It only takes an hour to make.
