I love easy breakfast casseroles you can make and bake to serve right away. Sometimes planning even 12 hours ahead is too hard. This is why I love this sausage biscuit quiche that is very similar to a bubble up sausage egg casserole. The Biscuit Quiche Recipe is easy to make with just refrigerator biscuits, breakfast sausage, bell peppers, onions, cheese and scrambled eggs.

What's in sausage biscuit quiche?
This sausage egg casserole can be as basic as you want it to be with just four ingredients plus salt and pepper to as many ingredients as you want. Here are the ingredients you need for this biscuit quiche.
- Refrigerator Biscuits - The small biscuits work the best in this recipe, but the large grands biscuits can be cut in quarters and work just fine as well.
- Eggs - Large Grade A eggs - the color of the shell doesn't matter. The insides of the eggs are all the same.
- Sausage - Ground breakfast sausage or ground pork with breakfast sausage seasoning added to the pork will work.
- Veggies - Peppers and onions are what I used, but if my kids liked mushrooms, I would add them to this sausage egg casserole too.
- Cheese - Shredded Mexican blend cheese from Tillamook is amazing for this recipe. But any shredded cheese can work in the recipe. Colby Jack or cheddar can work great as well.
- Seasonings and Spices - Salt and pepper can be the basic seasonings you use. Take it up a notch with some season salt. Add some heat with Tobasco or even red pepper flakes.
How to Make Quiche with Biscuits
This recipe was easy to make thanks to my Pampered Chef Micro cooker too. I cooked the ground pork with breakfast sausage seasoning, onions, and peppers all together in the micro-cooker. Feel free to just buy breakfast sausage, but since we get our 4-H pigs butchered, we have lots of ground pork in the freezer.
While the meat and veggies were cooking, I spread the biscuits out in a 13 x 9 pan. I didn't have a 12 oz tube so I add used two 7.5 oz cans. Mix the eggs and cheese in with the meat. Stir in the salt and pepper along with some tabasco.
Once it is all combined, spread the mixture over the biscuits. The quiche baked for 30 minutes at 350 degrees.
It was a fantastic bubble up sausage egg casserole. The kids didn't even mind some red peppers. I shouldn't say kids since one of my kids loves bell peppers.
Storing Leftover Breakfast Casserole
- Refrigerate - Store the leftover quiche in an air tight plastic or glass container. You can even just put the lid on the pyrex container and store in it.
- Reheating Breakfast Casserole - If you are just reheating one piece at a time, I recommend reheating in the air fryer for 4-5 minutes on 350 degrees.
Substitutions and Variations for Biscuit Quiche
- Use Ham - Love breakfast casseroles with ham? No problem, use a pound of cubed ham in place of the breakfast sausage for a bubble-up ham and cheese egg casserole.
- Substitute Swiss Cheese - If you use ham, Swiss cheese would be a fantastic substitution for Mexican cheese. You can also use cheddar or pepper jack cheese in the biscuit quiche breakfast casserole recipe.
- Make Mini Quiches - Grab your muffin tin and put a biscuit or a quarter of a biscuit in the bottom and top with the meat and egg mixture. Then bake. It will take about half the time to bake.

Biscuit Quiche Recipe
Ingredients
- 15 ounces refrigerated biscuits
- 1 pound pork sausage
- ½ cup bell pepper chopped
- ½ cup onion chopped
- 6 eggs beaten
- 2 cups shredded cheddar cheese
- salt and pepper to taste
- Tabasco to taste optional
Instructions
- Arrange biscuits in an ungreased 13"x9" baking pan.
- Brown sausage along with the bell peppers and onions. Drain grease and transfer to a bowl.
- In the bowl add eggs, cheese, salt and pepper, and Tabasco to the meat and mix to combine.
- Bake at 350 degrees for 30 minutes.

Excellent!! Cut the recipe in half which made 4 servings. Used a 9x9 baking dish, 4 Grands refrigerated buttermilk biscuits and all other listed ingredients. Flattened the biscuits to fit the bottom of the dish I would definitely make again.
