The simplicity of this tomato tortellini and sausage soup is what makes it so great. This is something even the most basic home cook can make.
The great thing about this soup is it has simple ingredients:
- Italian sausage
- cheese tortellini
- crushed tomatoes
- cream cheese
- chicken broth
- Italian seasonings
Toss in some seasonings to ramp up the flavor and call it good.
How to Make Crock Pot Sausage Tortellini Soup
Let's be serious about seasonings for a minute. I mean it. So much of what makes a recipe great has more to do with proper seasoning. While I am big fans of salt and pepper, for a soup like this you want to use flavorful Italian sausage. If you just by ground pork (or ground turkey) season the meat with Italian Sausage Seasoning.
Once the soup ingredients are combined in the crock pot, I added soup red pepper flakes, garlic salt, paprika, and pepper. And then I let it cook for two to three hours on high. I was around so I stirred it a few times during that time period to make sure it had enough fluid. Which, it didn't, so I added more broth.
I made this soup for a get together with a few of my best friends and their family. One mentioned making something similar but it not being soupy enough. I told her I had doubled the liquid when I made it. I, however, didn't technically make it the first time. Since the husband made it the first time, I felt like I had to really figure out if doubling the liquid was enough. And it was!
Toss some Parmesan cheese on top of the soup if you feel like being fancy. I had to make oven-baked grilled cheese to go along with the soup. Now I don't know if the family loved the crock pot sausage tortellini soup or the grilled cheese better.
Keeping Leftover Tortellini Soup
The leftovers of this sausage and tortellini soup are fantastic. Keep them in individual serving soup containers for quick work lunches or in a large container to reheat for the whole family. Reheat in the microwave for a minute at a time and stir. More water may need to be added to the soup. You can also reheat it on the stovetop until warm.

Crock Pot Sausage Tortellini Soup
Ingredients
- 20 ounce box of refrigerator cheese tortellini
- 1 pound ground pork or Italian Sausage, browned
- 28 ounce can of crushed tomatoes
- 8 ounces cream cheese
- 48 ounces chicken broth
- 1 teaspoon garlic salt
