This bacon cheeseburger soup recipe is a variation to the crock pot ham and potato soup recipe my family loves but offers the ground beef substitution.

- crumbled cooked bacon - Frying up your own bacon, especially thick-cut bacon is the way to go. I used the bacon crumbles I got from Sam's Club in this bacon cheeseburger soup recipe.
- diced onions - Sweet onions or yellow onions will both work just fine in this recipe. You can also use frozen diced onions.
- diced celery - Not everyone loves celery but I love the texture the celery adds to any potato soup recipe.
- shredded carrots - Bagged shredded carrots are a thing. This is what I recommend using but you can also shred or chop your own carrots.
- minced garlic - The jar garlic or a few cloves of fresh garlic can be used.
- diced potatoes - I use the diced hashbrowns in this recipe, but you an also dice up peeled potatoes for this recipe too.
- chicken broth and beef broth - In my world, Beef Better than Bouillon and Chicken Better than Bouillon is what I used. You can just use chicken broth or just beef broth but I like the combination of both broths.
- cream cheese - A block of cream cheese is what gives this soup a nice creamy base.
- shredded cheese - When it comes to the shredded cheese you can use cheddar, colby jack, pepper jack, or Velveeta. The choice is really yours.
- butter
- milk
- flour
- sour cream
- Green onions for garnish (optional)
- Pickles for garnish (optional)
- Sour cream for serving (optional)

Instructions - How to Make Bacon Cheeseburger Soup
This is not a dump-and-go recipe since you do have to precook a few ingredients before putting them in the crock pot.
In a skillet over medium heat, brown the ground beef until fully cooked. Before the beef is fully cooked add the onions, celery, and gourmet burger seasoning.
Into the crock pot dump the potatoes, carrots, and hamburger mixture. Pour the chicken and beef broth over the mixture and top off with the cream cheese.
Cook the bacon cheeseburger soup on low for four hours. Stir the cream cheese into the soup mixture. While the soup is cooking, shred up the cheese of your choice.
Make a small batch of white sauce with butter, flour, and milk. Stir it into the soup along with the shredded cheese. Finish off with sour cream.
Let the bacon cheeseburger soup cook until the cheese is melted. Then stir one last time before serving. Garnish with sour cream, shredded cheddar cheese, pickles, green onion, parsley or even celery leaves.
Hint: For the creamiest soup use Velveeta in the potato soup recipe.

If you have dietary needs for this recipe, here are some ingredient substitutions you could make:
- Gluten-Free - Replace all-purpose flour with a gluten-free alternative to make the soup gluten-free. Mixing cornstarch with the milk can also work as a substitute.
- Vegetarian - For a vegetarian version, omit the meat and use mushrooms instead for a hearty texture. The ground beef with plant-based alternatives like crumbled tofu, tempeh, or meatless ground.
- Dairy Free - For dairy-free soup, use vegan cheese shreds, cream cheese, and milk. Violife and Daiya make good dairy-free options.
- Keto or Low Carb - you can make this recipe either without potatoes or substitute cauliflower florets for the potatoes.

Crock Pot Bacon Cheeseburger Soup Recipe
Ingredients
- 1 pound ground beef
- 1 teaspoon gourmet burger seasoning
- 1 onion, diced
- 1 cup celery, chopped
- 2 cloves garlic, minced
- 2 pounds diced hashbrowns or potatoes
- ½ cup carrots, chopped or grated
- 4 cups water
- 2 tablespoons Better than Bouillon, roasted chicken or beef or combination of both
- 8 ounces cream cheese
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- 2 cups shredded Cheese for garnish
- ½ cup sour cream
Instructions
- Brown the ground beef in a skillet on the stovetop. Before the beef is completely cooked, add gourmet burger seasoning, onions, garlic, and celery.
- Add the diced potatoes, chopped or shredded carrots, ground beef with onions and celery as well as the better than bouillon dissolved in water to the crock pot. Top with the cream cheese.
- Season with salt and pepper. Cook on low setting for six to eight hours or on high for four hours.
- Right before serving, shred the cheese of your choice. Freshly shredded cheese melts better than bought shredded cheese. Also, make a white sauce by melting the butter with the flour to form a paste, then whisk in the milk until it is thickened and boiled.
- Stir the shredded cheese, sour cream, and white sauce in the bacon cheeseburger soup and make sure the consistency is thickened to your liking. When the cheese is melted, the soup is ready to serve.
- Garnish with shredded cheese, green onions, bacon, pickles, and even sour cream.
