Keto Taco soup combines hamburger or sausage, cream cheese, and Rotel with seasoning and broth for a low-carb Mexican meal. This keto soup recipe is literally like queso dip you can eat with a spoon without judgment. Whether you are eating low-carb, gluten-free, or a keto diet, this crock pot low-carb taco soup is sure to leave all loving it regardless of if you are on a diet or not.
I love easy recipes that don't take a ton of steps, dishes, or hard-to-find ingredients. I think this is why I was drawn to a simple taco soup recipe. This crock pot low-carb taco soup needs five simple ingredients and a few hours of simmering to give you an amazing soup for lunch or supper. But if you are short on time or an Instant Pot user over a crockpot, I have the Instant Pot Low-Carb Taco Soup too.

Keto Taco Soup Ingredients
Five ingredients. Well, five if you lump spices into one ingredient. Here is the thing with this soup, use the seasonings you like. But here is the base ingredients.
- Ground Pork - Ground pork is my favorite in this dish. If you can't find this you can use a combination of ground beef and chorizo or even just ground beef.
- Rotel - The canned tomatoes and chiles are perfect for this dish. In a pinch, you can also just use canned tomatoes.
- Cream Cheese - Dairy goods are my comfort food on low-carb diets. Full-fat cream cheese is best in this recipe.
- Chicken Broth - Chicken broth or a combination of roasted chicken Better than Bouillon and water works to make this low-carb soup. Beef broth can also be used in place of chicken broth.
- Taco Seasonings - Traditional taco seasoning can carry extra carbs. I use a combination of adobo seasoning, chili powder, and cilantro. The cilantro can be fresh or dried.
- Shredded Cheese - Topping off the taco soup with shredded cheese is the ultimate topping or garnish.
How to make Low-Carb Crock Pot Taco Soup
Start by browning sausage. I recommend a combination of hot sausage or ground pork with hamburger. You can easily use breakfast sausage in this or even all ground beef. While the meat is browning, fill your crock pot with cream cheese, Rotel, and taco seasonings of your choice.
When it comes to taco seasonings, I made up my own with garlic salt, adobo seasoning, and chipotle pepper powder. You could use just taco seasoning in your meat like you are making tacos. However, check the carb count if you are a carb counter!
Mix the browned meat into the cheese, Rotel, and seasoning and spices you had to a crock pot set to high. Stir to combine and then pour in chicken broth. You may want to add a little broth at a time to determine how thin you like your soup. Cook on high for two to three hours or low for four to six hours.
As one of my friends who tried this recipe said, it is like soupy queso! Seriously, does life get any better than eating queso with a spoon and getting away with it? Besides being full of cream cheese, I went ahead and topped it with shredded cheese and stirred in some dried cilantro before serving. Avocado, sour cream and onion would also be a great addition to the top of this soup. If you have fresh cilantro, feel free to use fresh too. If you have people not trying to be low-carb, go ahead and let them use tortilla chips too.
Go ahead and make yourself a bowl of low carb crock pot taco soup. You won't regret it! If you love this recipe, don't miss out on the Instant Pot Low-Carb Taco Soup too.
Variations to Crock Pot Low Carb Taco Soup
This ground beef or pork based taco soup can be changed up to add some variety to your taco soup cravings.
- Chicken Taco Soup - Substitute ground chicken or even shredded chicken for ground beef for a low-carb chicken taco soup.
- Spicy Low-Carb Taco Soup - Add jalapeno slices or a teaspoon of red pepper flakes to the soup to spice it up.
- With Carbs - If you have carb eaters who can live on protein and fat alone, add cooked rice to the soup to make it a bit heartier.
Storing Leftover Low Carb Taco Soup
This soup is great for leftovers. You can absolutely keep this soup in the refrigerator or freezer.
- Refrigerate leftover soup - For up to three days reheat this soup in the microwave in the 30 second increments.
- Freeze low carb taco soup - Place in a large freezer bag to reheat as a large batch or in 1 cup individual servings. Free for up to three months.
Keto Soup Recipe Tips
Just starting on the adventure of low-carb dieting? Here are a few of our tips, meal plans, and recipes.
- Don't Use Low-Fat Ingredients - It is tempting to grab that low-fat cream cheese, but fat is needed to make keto work. In this keto taco soup, it is no different.
- Seasoning can have fillers - Read labels even on your seasonings. A lot of taco seasonings have fillers. This is why making a homemade version might be the best route.
- Xanthan for thickening - If you want to thicken up the taco soup, use xanthan gum powder.

FAQ
Yes! This can easily be made in a dutch oven on the stove top. Follow the instructions the same but cook over low heat with the lid on. Stir every five minutes or so to be sure it is not burning.
Chicken is a great substitute for traditional taco meat soup. Shredded chicken or grilled and cut-up chicken will both work in this recipe.

The Taco Soup is SOOOO good! Thanks!
John Snow
Explain to me how this is โLow Carbโ. I can promise you if you eat this youโll get dat....
Megan F
You must not know a lot about carbohydrates sir. You can lose weight by cutting carbs and eating fat if you know what youโre doing. This is a low carb soup because it doesnโt have the beans, corn, etc which are all high carb veggies. It sounds delicious. Thanks for posting. I canโt wait to try it.
Not Jon snow
A more accurate reply would be "You know nothing Jon Snow."
Connie
Omg! Epic reply!!
Chelsea
What size is a serving?
Haley M
I think he's saying it's really delicious which is why it's not low carb because you can't help yourself from having multiple servings!
Koren
I made this soup tonight and it was absolutely delicious!!!! I did not add cilantro because I didnโt have any. I used 2 lbs hamburger, organic taco seasoning, I used 1 can chicken and 1 can beef broth because thatโs what I had on hand. If you are looking for an easy Keto soup this is easy and delicious
.
Becky
I'm glad to hear it was good with chicken and beef broth (I didn't have enough chicken broth on hand). It's in the Crock-Pot now and smells wonderful!
Calley
Any tips on how to fix cream cheese lumps?
Jaime
How much did you consider a serving? A cup? Need to know for macros. That 547 is steep and want to make sure I understand.
Mickie
Jaime, it says it makes 8 servings so I would divide it by 8 and then you will have your answer. ๐
Darrian
Jaime did you figure this out? I am also tracking and would like to know without needing to take everything out, divide it into 8 servings and then measure out a serving.....
MJ Koehler
My family loves this recipe!
Jkarsberg
It's low carb because there aren't a lot of carbs in it. Don't confuse low carb with low fat or low calorie
Shauna
I have this in the croc pot now. And it seems too watery. Anyway I can fix this?
Leah
If you want some of the liquid to evaporate, have the lid partially off.
Heather
Add a cup or two of shredded cheddar! Actually, I just added a handful to my individual bowl of soup and it thickened it right up.
Lesli
Ground beef, onion, garlic, hot taco seasoning packet, salt pepper, can of tomatoes and a brick of cream cheese topped with shredded cheese and cilantro, delicious!! Thanks for the inspiration!
Megan
Has anyone used sour cream with it instead of 2 cream cheeses? I only have 1 cream cheese :/
Leah
Use one, it will just not be quite as creamy!
Jenny
What is dat?
Stephany
He meant fat
Alyssa
We made this last night and hands down t was amazing!!! Instead of hamburger meat I๏ธ used pork sausage and it gave an extra kick my husband needed!
Sonya
This soup is absolutely delicious!!! I made it for dinner. No complaints from the family..
bradyn
lol which ingredients have carbs?
Pam
If you look up each individual ingredient, you'll see that yhey are low in carbs. The only difference is change is the ground beef since I perfer ground turkey. I'd add onion too.. the highest carb in the recipe are the tomatoes and since you only get about 1/8 cup worth in your bowl, it is low carb too...
Amanda
Is 1/8 cup a serving?
BK
1/8 c is 2tbsp. A serving is way more than 2 bites.
Becky
I think Pam meant that there's 1/4 cup of tomatoes in each serving.
Dj
Onion sounds like a great idea. You could also garnish it with some green onions! Queso fresco, would probably sub for cream cheese, right? Just a idea...
JJ
Awesome low carb soup. I like it spicy so I used pork sausage and the rotel with habaneros. It came out perfect.
Bob
Bwaaaahaaaa. Youโre dumb
Bryan
Followed this recipe exactly, ate the recommended serving, but it kicked me out of Ketosis and I havenโt been able to get back for a few days with this meal. (Confirmed using ketones test strips). REally delicious but not โKetoโ as it claims.
Karen
Strips are unreliable. Why? Because if you are in ketosis, your body starts using ketones for fuel and when that happens there are fewer ketones in your urine....because your body used them for fuel. If you want an accurate way to track whether you are in ketosis, get a blood monitor. Urine strips don't work.....you can be deep into ketosis and get a negative on them.
Stephanid
Mine did not come to 5 carbs. Maybe it's the brand of cream cheese I bought. I didn't buy the low fat version. I added up 'the ingredients and it came to 8 carbs.
Nikki
Not all brands have the same number of carbs. Also, you should really use the full fat cream cheese if you are eating a keto diet. So far, I have found Philadelphia cream cheese to have the lowest carb count. Each recipe contributor does their best to give the most accurate numbers, but each of us should be vigilant about doing our own part for the best results. What a delicious recipe, though, right?!
Christine Torcaso
I've tried a few of these low carb recipes but, knowing that high cholesterol runs in my family I felt that I should modify some of the ingredients to not only lower the carbs but lower the fat and sodium. Knowing how to read nutritional labels and understanding how your body breaks down and stores the foods you eat/digest can really give you a better perspective.
Stephanie
Can you cook longer on low temperature? I need to cook it while at work
Lauren

This recipe is fantastic. It tastes great, perfect for a cool fall night. I've made it many times!
Deb
4 net carbs per serving is pretty low.
Holly
I made this and it was really salty but good. I'm not sure what I did to make it so salty! I put rotel, hamburger, sausage, chicken stock and taco seasoning. I didn't salt it! ๐
Jasmine
I believe it's the rotel. You could try using one can to see if that made any difference.
No
The nutritional information is useless without telling what a serving size is.

Not if you do keto.. I lost 70 lbs.. your body will burn fat
Kat
I made this for a picky eater, my elderly mother. She doesn't like beef so I shredded some chicken. Two cans of Rotel would have been too spicy even the mild one so I use one mile can of Rotel and one of crushed fire roasted tomatoes and some mild green Chili's. I did everything else exactly the same and it turned out wonderful
Leah
This sounds so good!
Tracy
Wonder if I can put this together the night before then turn on in morning before work
Karen Znajda
Did you drain the rotel?
Mickei
It's soup, no need to drain the Rotel
Connie Brock
It is really good! I added extra onions while cooking the sausage. Also used 1 lb of hot sausage and 1 lb of regular sausage and just a little garlic power . It was a real hit!!
Dmaggi
Can someone please tell me what the serving size is?
Dens
Love this soup. Husnband remained keto on 2 bowls, he is diabetic so very important. No meds!

Mara
Do you have a list of the macros? Or maybe just the carb count per serving?
Amanda
That would all depend on brands you use I would believe. Not all are created equal.
Miranda
When you put this into My Fitness Pal using your specific ingredients it will give you nutrition values per serving. When I put it in using my ingredients, it says 8g of carbs, 436 calories, 69g of fat, and 27g of protein. The net carbs would be 6g -- 8g of carbs - 1g of fiber.
Diane
How much is the servinng??..
Jenny Cobb Miller
That would super helpful! I'm drooling over here ๐
Leah
There are 8 servings and 5 carbs per serving. I have added nutritional information above.
Diane
How many cups in a serving?
Ella
How many cups or ladles are in a serving? I made this yesterday and it was amazing!!
Jacquelyn
Wondering the Same thing!
I decided to do a cup and a half per serving but idk if thatโs right
Becky
I would like to know the serving size also. A cup? A cup and a half? I guess Iโll have to measure it out myself and figure it out, but it sure would be helpful if it were posted in the recipe for everyone to benefit from. Very tasty recipe.
Joyce
This is very yum I added 2 oz of broccoli and 2 ounces of califlower
Leah
That sounds amazing!
Mechelle
Couls you add pasta to this ?
Pamela S Larcom
Not and keep it low carb!
Brandi
Would gluten free pasta be low carb?
Leah
Most likely no. Gluten free pasta is usually made from corn or rice flour both of which will have carbs.
Kathy
I bet stirring irised cauliflower at the very end would be great too!
Rhoni
I didn't have cilantro and made it anyway! DELICOUS!!
lisa wood
how many carbs in a bowl of this soup.thank you lisa wood

How much is a serving??
Amber
How many servings does this make? I made it but don't know how to log the calories, thanks!
Swan
How much is one serving?
Leah
One cup is how measured a serving
Christine
Iโm definitely making this
Christy
This is delicious! I did not change the recipe at all. Note: I used Cooper brand cream cheese. I cut the pieces small, but it still Wasn't fully melted after 2.5 hours on high. I used a whisk to stir, and wa-la...that did the trick. Will definitely make this again.
Brandi
Did you use 2 cream cheese? The recipe calls for 2, yet the video only showed one. Thanks in advance!
Leah
Two, 8 ounce packages. The video made half the recipe to just show the process. Thanks for asking for clarification!
Taryn
How much is one serving of this soup?
Leah
One cup is a serving.
Jennifer
how many calories are in a bowl?
Lori
Your taco seasoning blend sounds good. What amounts of each did you mix together (how much garlic salt, how much ancho chili pepper and how much adobo seasoning) Thank You
James
Can't find answer to taco seasoning recipe on amounts of garlic salt, adobo seasoning, and chipotle pepper powder. Could you please provide since I bought ingredients. Ready to make.
Robyn
Amazing! Definitely a keeper!
Heather W
Does anyone know the service size?
Heather W
I meant serving size.
Leah
A serving size is one cup
Pamela S
The answer to that question has been posted no less than 5 times that a serving size is one cup!
Caitlyn Witt
How do I make this soup thicker? It came out a bit watery.
TexasAngel
I was looking thru comments to see if I should drain the juice from the rotel... your comment leads me to believe maybe I should?
Leah
It is totally fine to drain the juice.
Onie Nelson
You could not use as much broth if you wanted to!
Leah
Decreasing the broth would be the best solution.
donnie loy
I can I make this soup thicker? I really like the soup. Just wish it was thicker.
Kimmysue
Don't add as much broth?
Leah
Decreasing the broth would help make it thinner.
Katie
Why would it become thinner if you use less broth? Would seem to me it would be thicker. I just don't get your response. Please explain.
Tiffani
Less liquid (broth) makes the soup thicker. If you want it thinner, youโd add more liquid (broth.)
Not sure how else that can be explained.
Melanie
at the very end I just transferred it to a pot on the stove- let it simmer with no lid - 15 minuites later I had thick yummy soup! Just simmer it away!
Dj
I think they meant "thicker"... Probably just an accident.
K.K.
You meant thicker, thatโs why it was confusing
Raven
So easy! So yummy! I crumbled gluten-free corn chips on top with shredded cheese!
lisa wood
how many carbs are in a bowl of this taco soup?
Leah
There are 5 carbs in one cup of the soup
Alexis
Wait, how is 1 cup of this 547 calories!? Itโs just beef and cream cheese? Omg... I made this not realizing the caloric amount.
Pamela S
SMH 5 carbs per serving and a serving size is one cup and this makes 8 servings. Doesn't anybody know how to read anymore? Sorry but the same three questions have been asked over and over with the answers right in front of them.
Gina K
LOL!!
Morris
Its not shown in the recipe. It just says 8 servings. Where does it say the size of the serving? Besides the tons of comments? If someone is make a snap judgement on making it reading comments might change their mind. Shouldnt it be something with the nutritional facts?
CAMERON
Omg thank you! ๐๐คฆโโ๏ธ
CAMERON
Omg! Thank you!! ๐๐คฆโโ๏ธ
Jennifer
I put in the calculations. If you use only one can of rotel, its 12 carbs a serving, not 5. Serioulsy. Why do people have to be so rude. 8 servings does not mean IT'S ONE CUP PER SERVING. mine is in the crockpot and you better believe I'm measuring the whole thing out. 12 is too many carbs. And that is after deducting the fiber!
Crystal
Have you ever tried freezing it?
Leah
No I have not, but would think it would work just fine.
Onie Nelson
I make a taco soup and freeze all the time and it freezes well. Pretty sure this will, too.
Stephanie
This is really good and so easy. I didn't go slow cooker route, just browned meat in pan and put everything else in separate soup pot on the stove then added the meat once it was browned and drained, simmered on stove for a little while and done! It is delicious! Thanks for a tasty and simple recipe.
Sam
How long did you cook it for that way!?
JoAnn Ackley
YUM! YUM! YUM! I made this for dinner tonight and it is really good, delicious!
Chris
Made this tonight...it was FANTASTIC!!! A homerun for this house of 5! Didn't miss anything by eating this, was slightly surprised how good it really was without the usual stuff in it! Thank u!
Suzy
Do you drain the rotel?
Susan Turner
Looks really good but awfully high in sodium which I have to restrict. RoTel makes a low sodium and most of the other ingredients could substitute low sodium versions to adapt to my diet.
April
I am curious about you measurements for the taco spices too!! Would love to know how much of each ! This looks amazing and I would love to fix it!!
Lisa
I subbed 1 pound of chicken tenders for 1 of the pounds of pork
Thanks for the recipe
Lisa
Billi
I made this soup for dinner so yummy ๐ and my husband even ate some! I did use turkey sausage.
Summer
I am going to make this tonight but I am going to use chicken breast instead of beef or pork. Sounds delicious and I can't wait!
Janet Westhoek
Do you think I can freeze this?
Kim
This soup was extremely easy and turned out perfect. It has become our new favorite soup and crockpot recipe. We will be making it quite often.
Caitlin
What kind of sausage can you use? Breakfast or Italian?
Dana Wambach
Do you cook this covered or uncovered?
Dj
In a crockpot you definitely want to keep it covered!
Sarah
My daughter is gluten free (has to be, not fad) and we more than likely would not be able to use the store bought chicken stock. Make sure to check all ingredients that you put into a recipe. I know that since going gluten free, I have to make my own stock and make my own cream of (mushroom, chicken, celery, etc.) soups. Just a heads up.
Kim
Awesome recipe! I made Keto meatloaf yesterday and used that for the meat. Turned out amazing! Thank you!
Jill
Loved it... I'm actually thinking about eating it again for breakfast, lol. I used a good amount of fresh cilantro and thought that added a fresh taste. I might have to try more veggies next time!
Beth Packer
The soup is so stinking awesome! I threw it all in the crockpot but I couldnโt resist keeping a serving out for myself. I just boiled it for a few minutes on the stove and added some cilantro and cheese and I had a secret feast!
Ashley
Awesome soup! My family loves this, even the ones who are not low carbers.
I make this soup a LOT. I've made it in my crock pot and on my stove, either way works fine. If you have the time and need something that will cook a few hours then crock pot is the way to go but if you need it done sooner than you could just cook it in the stove.
I like to add a can of corn, a can of black beans, & even some black olives. This adds carbs but if you're not worried about carbs it's sooo good!
Morris
How much is a serving? A cup?
Noelys
Curious if anyone tried to freeze this soup? Would you cook the soup normally and then freeze or brown the meat throw the ingredients together and then freeze?
Megan @ Megunprocessed
I love making soup in my slow cooker!
Erin
Yum this looks so good!
Richa Gupta
Such a delicious soup to try during winter!
Kayla
This was a great and easy soup to make, I added black beans to make it thicker and it was perfect!
Carolyn
This sounds delicious!
Laurie
Really good and easy.
CraftySue
This taco soup is delish!!!! Iโll definitely be making this again!
Jeni
If you use the Light and Fit Cream Cheese, which is the low fat version, how do your macros get such a high fat content? What would it actually be if you calculated with the low fat version? Would it still be KETO if the fat is lower than the protein?
Danylle
Wow. Just Wow. This was delicious. Even if I wasn't on keto, I would still make it this way. It tasted like I wasn't trying to manipulate a recipe so I could eat it and I very much appreciate that.
Kaylee
Is their really 33g of protein in 1 cup of this soup?
Teacher H.
I am amazed at the number of people who asked the same questions over and over and over!!! I followed the recipe to a T, checked above the recipe for how long to cook it, how many servings, etc. and found all the answers to these questions in the recipe itself. I also followed the tips Leah gave in her commentsThis why ya I could not run a blog. No one would visit my blog after I blasted, โJust read the #%*โฌ recipe!!!! Thank you Leah for putting up with such nonsense and for your wonderful recipe! I agree queso on a spoon!!! Yummy!!!
Leah
Oh I am not perfect and sometimes make mistakes too! Thanks for reading along!
Sydro
If I cut the recipe in half, will it still need to cook as long?
Dorene
I've been looking for something like this that is keto. Especially during this cold winter.
I'm giving it 5 stars already because I can tell it's going to be wonderful and because you added the nutrition info for us! Thanks so much!!
Kelly M
This soup is amazing! Topped mine with shredded cheddar, sour cream and some avocado. Yummy!!
betfair
Greate post. Keep posting such kind of info on your blog. Im really impressed by
it.
Hey there, You have performed a great job. I will certainly
digg it and in my opinion suggest to my friends.
I'm confident they will be benefited from this website.
Whitney
Could you present your nutritional info in grams instead of vague "servings"? Other than that good recipe. Thanks.
Chinetha
Definitely a winner with this Taco Soup. Absolutely delicious! Great flavor and so easy to make. I added sliced mushrooms to mine and i used 1 can of rotel and 1 can of diced seasoned tomatoes. Awesome! Thanks for sharing this fabulous recipe.
L
I am so sorry but this low carb soup is not good. I followed your recipe and its inedible. To someone that's starving from low carb eating, I'm ready to eat anything off a boot. Only thing that made it so I could eat it was adding Dreamfields macaroni to it. And I know the rage about them.
I see the Penzeys Spices in the background and love those!
Carol
Can this be frozen?
Grace
Can I cut this recipe in half or would it ruin the results? Looks great!!!
Tara
Will ground Italian sausage work or is it referring to breakfast sausage? Also does anyone know if it will taste okay with 1 pound ground beef and 1 pound sausage mix??
Michelle S
Tried this today and loved it! I didn't have cilantro, used only one can of Rotel (less carbs), and used ground beef. I prepared in my instant pot, instead of a crockpot. (Manual setting for 25 minutes.) Turned out perfect! A added a little shredded cheddar and a little dollop of sour cream to my bowl. Delicious!!!
Rebecca
Made this with turkey sausage for dinner tonight! In case anyone is curious, my individually counted macros are 346 calories, 27 g fat, 19.4 g protein, 4.5 net carbs (5.1 total) per serving. Delicious! Thank you for the recipe!
Melissa Curtis
Definitely one of the best soups I've ever had .. thanks for sharing!
Leah
So glad you loved it!
Shelby Money
I have made this a couple times now and every time my cream cheese is chunky.. it never fully dissolves... what am I doing wrong? Other than that this recipe is amazing!
Jodi Stephan
This is so good. Taco soup was a staple in our house before we started keto. I wasn't sure it would be good without beans and corn but it is! Only change I made was that I added 2 pablanos and some jalapeรฑo for kick. Was soooo good! Making a batch this week to freeze as the kedtivers last time I made it froze so well!!
Jodi Stephan
Leftovers I mean
Sarah
When I entered all the ingredients into carb manager with 8 servings, it says 9 net carbs. Once I make it, Iโll have to figure out what 1 serving is. If it makes 8 cups, that will be a 1 cup serving. Just wonโt know until it.
Sarah
It actually makes 12 cups, so 1.5 cups is 9 net carbs. That is with breakfast sausage and homemade taco seasoning since package stuff has sugar.
Joy E
This is a recipe that just keeps on going. We love it. Us being only a family of two, we have had so many meals out of this and I still made up a couple of portions for the freezer. It's so rich and so filling, you only need a small bowl to feel satiated. This recipe is a keeper!
AteToTheBar
Just starting with low-carb diet and found this delicious recipe. This will be a staple, for sure! Super easy, meaty, and full of flavor. Didn't have Rotel, so used diced tomatoes and jalapenos, which worked well. Although it's great without, I added some cheddar and sour cream to finish. Would be a great dish to bring to a party, as well.
katie
i used half and half pork and beef and used spicy taco seasoning as well as crushed red chili flakes.
husband ate 2 bowls in one go ( good thing he isnt keto like me! ) i also made it on the stove vs. the crock pot and simmered for 45 mins,
would this freeze well? i was hoping so for meals when i have no time to cook .
Kimberle
Hi, I thought this recipe looked good, but I wanted to spice it up a bit. So, I used 1 lb of ground beef and 1 lb of beef chorizo. I also added an onion (chopped) and some garlic. lastly, I added a can of chopped green Chile. It was really good. I loved this recipe, and my husband loved it too! ** as a topper I added some thin tortilla strips along with cilantro.
Misty
BEST keto Taco Soup!! It was delicious!!
My edits: I used rotel Mexican Style with cilantro & lime. I also purรฉed the rotel cause I donโt like chunks of tomatoes. Used one lb deer burger & one lb sausage. I used the stir-in paste Cilantro. Added more taco seasoning. Garnished with fresh squeezed lime juice & cheese.

Could you please define the "serving size" of the low carb taco soup recipe?
Amanda
Neufchรขtel cheese (shown in picture) is used and should probably be listed in the ingredients list. It is way less carbs than regular cream cheese. That being said, I loved this recipe and so did my family. I used Salsa Style tomatoes instead of the Rotel brand toms/chilies and it was super good. I will definitely make this again!
I cant wait to try it with ground turkey.

My husband can't have tomatoes or hot sauce so are there any suggestions as to what might work for him?
Lyn
I'm just curious about the texture of this soup. At the beginning of the video, the texture looks much thicker and cheesier than the end product from the slow cooker which is 'watery'. Why do the textures different? The thicker version looks delish! ๐
Leia
Loved it!

Absolutely delicious, and so easy!! Thank you for sharing!!!

When you figure in the nutritional value per serving, I am presuming the cheese isn't figured in? When I calculate the ingredients in Carb Manager, with everything to be divided over 8 servings I come up with 8g net carbs (11 total), 4 grams fiber, 38 grams of protein, 42 grams of fat, and 572 calories. I'm not fussing, it looks absolutely delicious. I'm just a stickler about tracking and wanted to figure out where/how my calculations ended up being so different from those listed above. Thank you!

Easy and very delicious!

Oh my god we love this soup! ๐ฅฃ This is my third time making it in probably 6 weeks. Itโs that good. We use hot sausage and ground Turkey, as well as hot rotel. So good!
Kristine
Why do you cook it so long.. especially with dairy in it?
Leah
It takes that long for my cream cheese to melt and get incorporated throughout. If you can do it faster, go for it.

A little confused here. It says use adobo OR taco seasoning. But then in the directions it says both. I wanted to use the adobo for both the meat and crockpot, so do I do the 1/2 TBSP in meat then 1/2 TBSP in crockpot?
Leah
Yes. Sorry, I will clean those directions up. I use half in the meat and then half in the soup. So yes, roughly a half tablespoon in both places. I then taste to make sure I don't need more seasoning for my liking.
Cori
I love this soup!! My question isโฆ do you know how I can do it quicker in the instant pot? Thanks
Bonnie
How much does one serving measure? One cup?
Leah
You will get closer to 12 cups of soup total. A serving will be more like a cup and a half.
Maxine
I am not sure why this needed to cooked in a crockpot for 2-4 hrs. My stove-top version was delish!
Leah
It definitely can be made stove top. I love the make it and forget it approach so I can leave the house and know it will be ready when I get home.

Great Flavor and easy to make! Loved it!
Krista
Very tasty. Perfect winter soup.
Kayla Tillery
I make this a lot in the winter time. Itโs so simple and easy to make. Everyone enjoys it! Even people I make it for that do not follow low carb or keto.
Brandi Sawicki
This is our new favorite low carb soup, so glad we found it!

Wonderful recipe! I use packaged mild taco packet, precooked breakfast sausage cut into small pieces, regular canned tomatoes and lo-sodium chicken stock - we love the result (and, it's easy - I'm not much of a cook and I can make this successfully).
KetoManiac
Ooops, I forgot to rate it. Five Stars. Yep, final answer: five stars!
Sarah
So easy to make thank you for the reciepe.
Lisa
I made this for dinner tonight put made it on the stove top! Itโs so good!
Ashley
I saw the nutrition info for 1 serving but how much is 1 serving?
1 cup?
2 cups?
Leah
The nutritional value is for one cup of soup.
Dana
Tried this tonight and it was absolutely amazingโฆ Iโm still iffy on if itโs keto or not ๐ I added everything up in the keto calculator and 2 cups apparently was 5.7 ish carbs? Idkโฆbut itโs freakin delicious.

The recipe is customizable, allowing you to adjust the spice level, sweetness, or other elements to suit your personal preferences.
Courtney
I added 3 bell peppers, and a can of black beans, because I wanted some veggies in this. Itโs incredibly mild, considering I used all of the recommended ancho chili powder and an entire packet of taco seasoning. I would probably only use one package of cream cheese in the future, so that it could be spicier. Iโm also topping it with some avocado and Mexican cheese, which is a nice way to cut spice after the fact. Still not sure how to get it some extra spice for this batch, but will probably try adding some cholula hot sauce.
Tina
This was so good. I brought to over to a friend's get-together. They loved it. I made it just as the recipe outlined. The only thing I did additionally was put it in the blender as the cream cheese didn't melt all the way. It made it more of a creamy texture. Will make it again.
Meghan Hansen
Yumm! Tried this tonight and ended up using 2 (14oz) cans of rotel since that was what the store had for off-brand. Since we're doing keto, future batches will just use 1 (14 oz) can. I can say this was suuuuper good though and I'm excited for leftovers! After I made the recipe I saw the additional notes so going to try adding some chili pepper flakes and see how it is to spice it up, though we were happy with how the recipe is as written.
