I love easy recipes that don’t take a ton of steps, dishes, or hard-to-find ingredients. I think this is why I was drawn to a simple taco soup recipe. This crock pot low-carb taco soup needs five simple ingredients and a few hours of simmering to give you an amazing soup for lunch or supper. But if you are short on time or an Instant Pot user over a crockpot, I have the Instant Pot Low-Carb Taco Soup too.

Keto Taco Soup Ingredients

Five ingredients. Well, five if you lump spices into one ingredient. Here is the thing with this soup, use the seasonings you like. But here is the base ingredients.

  • Ground Pork – Ground pork is my favorite in this dish. If you can’t find this you can use a combination of ground beef and chorizo or even just ground beef.
  • Rotel – The canned tomatoes and chiles are perfect for this dish. In a pinch, you can also just use canned tomatoes.
  • Cream Cheese – Dairy goods are my comfort food on low-carb diets. Full-fat cream cheese is best in this recipe.
  • Chicken Broth – Chicken broth or a combination of roasted chicken Better than Bouillon and water works to make this low-carb soup. Beef broth can also be used in place of chicken broth.
  • Taco Seasonings – Traditional taco seasoning can carry extra carbs. I use a combination of adobo seasoning, chili powder, and cilantro. The cilantro can be fresh or dried.
  • Shredded Cheese – Topping off the taco soup with shredded cheese is the ultimate topping or garnish.

How to make Low-Carb Crock Pot Taco Soup

Start by browning sausage. I recommend a combination of hot sausage or ground pork with hamburger. You can easily use breakfast sausage in this or even all ground beef. While the meat is browning, fill your crock pot with cream cheese, Rotel, and taco seasonings of your choice.

When it comes to taco seasonings, I made up my own with garlic salt, adobo seasoning, and chipotle pepper powder. You could use just taco seasoning in your meat like you are making tacos. However, check the carb count if you are a carb counter!

Mix the browned meat into the cheese, Rotel, and seasoning and spices you had to a crock pot set to high. Stir to combine and then pour in chicken broth. You may want to add a little broth at a time to determine how thin you like your soup. Cook on high for two to three hours or low for four to six hours.

As one of my friends who tried this recipe said, it is like soupy queso! Seriously, does life get any better than eating queso with a spoon and getting away with it? Besides being full of cream cheese, I went ahead and topped it with shredded cheese and stirred in some dried cilantro before serving. Avocado, sour cream and onion would also be a great addition to the top of this soup. If you have fresh cilantro, feel free to use fresh too. If you have people not trying to be low-carb, go ahead and let them use tortilla chips too.

Variations to Crock Pot Low Carb Taco Soup

This ground beef or pork based taco soup can be changed up to add some variety to your taco soup cravings.

Ingredients

  • 2 lbs ground pork beef or sausage
  • 2 8-ounce packages of cream cheese
  • 2 10-ounce cans of Rotel

        You must not know a lot about carbohydrates sir. You can lose weight by cutting carbs and eating fat if you know what youโ€™re doing. This is a low carb soup because it doesnโ€™t have the beans, corn, etc which are all high carb veggies. It sounds delicious. Thanks for posting. I canโ€™t wait to try it.

        I made this soup tonight and it was absolutely delicious!!!! I did not add cilantro because I didnโ€™t have any. I used 2 lbs hamburger, organic taco seasoning, I used 1 can chicken and 1 can beef broth because thatโ€™s what I had on hand. If you are looking for an easy Keto soup this is easy and delicious

        If you look up each individual ingredient, you’ll see that yhey are low in carbs. The only difference is change is the ground beef since I perfer ground turkey. I’d add onion too.. the highest carb in the recipe are the tomatoes and since you only get about 1/8 cup worth in your bowl, it is low carb too…

        Followed this recipe exactly, ate the recommended serving, but it kicked me out of Ketosis and I havenโ€™t been able to get back for a few days with this meal. (Confirmed using ketones test strips). REally delicious but not โ€œKetoโ€ as it claims.

        1. Strips are unreliable. Why? Because if you are in ketosis, your body starts using ketones for fuel and when that happens there are fewer ketones in your urine….because your body used them for fuel. If you want an accurate way to track whether you are in ketosis, get a blood monitor. Urine strips don’t work…..you can be deep into ketosis and get a negative on them.

        Mine did not come to 5 carbs. Maybe it’s the brand of cream cheese I bought. I didn’t buy the low fat version. I added up ‘the ingredients and it came to 8 carbs.

          Not all brands have the same number of carbs. Also, you should really use the full fat cream cheese if you are eating a keto diet. So far, I have found Philadelphia cream cheese to have the lowest carb count. Each recipe contributor does their best to give the most accurate numbers, but each of us should be vigilant about doing our own part for the best results. What a delicious recipe, though, right?!

I’ve tried a few of these low carb recipes but, knowing that high cholesterol runs in my family I felt that I should modify some of the ingredients to not only lower the carbs but lower the fat and sodium. Knowing how to read nutritional labels and understanding how your body breaks down and stores the foods you eat/digest can really give you a better perspective.

      I made this for a picky eater, my elderly mother. She doesn’t like beef so I shredded some chicken. Two cans of Rotel would have been too spicy even the mild one so I use one mile can of Rotel and one of crushed fire roasted tomatoes and some mild green Chili’s. I did everything else exactly the same and it turned out wonderful

      When you put this into My Fitness Pal using your specific ingredients it will give you nutrition values per serving. When I put it in using my ingredients, it says 8g of carbs, 436 calories, 69g of fat, and 27g of protein. The net carbs would be 6g — 8g of carbs – 1g of fiber.

  1. This is delicious! I did not change the recipe at all. Note: I used Cooper brand cream cheese. I cut the pieces small, but it still Wasn’t fully melted after 2.5 hours on high. I used a whisk to stir, and wa-la…that did the trick. Will definitely make this again.

          at the very end I just transferred it to a pot on the stove- let it simmer with no lid – 15 minuites later I had thick yummy soup! Just simmer it away!

Why do people have to be so rude. 8 servings does not mean IT’S ONE CUP PER SERVING. mine is in the crockpot and you better believe I’m measuring the whole thing out. 12 is too many carbs. And that is after deducting the fiber!

    This is really good and so easy. I didn’t go slow cooker route, just browned meat in pan and put everything else in separate soup pot on the stove then added the meat once it was browned and drained, simmered on stove for a little while and done! It is delicious! Thanks for a tasty and simple recipe.

  5. Looks really good but awfully high in sodium which I have to restrict. RoTel makes a low sodium and most of the other ingredients could substitute low sodium versions to adapt to my diet.

  8. This soup was extremely easy and turned out perfect. It has become our new favorite soup and crockpot recipe. We will be making it quite often.

  9. My daughter is gluten free (has to be, not fad) and we more than likely would not be able to use the store bought chicken stock. Make sure to check all ingredients that you put into a recipe. I know that since going gluten free, I have to make my own stock and make my own cream of (mushroom, chicken, celery, etc.) soups. Just a heads up.

    The soup is so stinking awesome! I threw it all in the crockpot but I couldnโ€™t resist keeping a serving out for myself. I just boiled it for a few minutes on the stove and added some cilantro and cheese and I had a secret feast!

      Awesome soup! My family loves this, even the ones who are not low carbers.
      I make this soup a LOT. I’ve made it in my crock pot and on my stove, either way works fine. If you have the time and need something that will cook a few hours then crock pot is the way to go but if you need it done sooner than you could just cook it in the stove.
      I like to add a can of corn, a can of black beans, & even some black olives. This adds carbs but if you’re not worried about carbs it’s sooo good!

    If you use the Light and Fit Cream Cheese, which is the low fat version, how do your macros get such a high fat content? What would it actually be if you calculated with the low fat version? Would it still be KETO if the fat is lower than the protein?

    I am so sorry but this low carb soup is not good. I followed your recipe and its inedible. To someone that’s starving from low carb eating, I’m ready to eat anything off a boot. Only thing that made it so I could eat it was adding Dreamfields macaroni to it. And I know the rage about them.

    Tried this today and loved it! I didn’t have cilantro, used only one can of Rotel (less carbs), and used ground beef. I prepared in my instant pot, instead of a crockpot. (Manual setting for 25 minutes.) Turned out perfect! A added a little shredded cheddar and a little dollop of sour cream to my bowl. Delicious!!!

    This is so good. Taco soup was a staple in our house before we started keto. I wasn’t sure it would be good without beans and corn but it is! Only change I made was that I added 2 pablanos and some jalapeรฑo for kick. Was soooo good! Making a batch this week to freeze as the kedtivers last time I made it froze so well!!

      1. When I entered all the ingredients into carb manager with 8 servings, it says 9 net carbs. Once I make it, Iโ€™ll have to figure out what 1 serving is. If it makes 8 cups, that will be a 1 cup serving. Just wonโ€™t know until it.

        1. It actually makes 12 cups, so 1.5 cups is 9 net carbs. That is with breakfast sausage and homemade taco seasoning since package stuff has sugar.

    Just starting with low-carb diet and found this delicious recipe. This will be a staple, for sure! Super easy, meaty, and full of flavor. Didn’t have Rotel, so used diced tomatoes and jalapenos, which worked well. Although it’s great without, I added some cheddar and sour cream to finish.     husband ate 2 bowls in one go ( good thing he isnt keto like me! ) i also made it on the stove vs. the crock pot and simmered for 45 mins,
    would this freeze well? i was hoping so for meals when i have no time to cook .

    Hi, I thought this recipe looked good, but I wanted to spice it up a bit. So, I used 1 lb of ground beef and 1 lb of beef chorizo. I also added an onion (chopped) and some garlic. lastly, I added a can of chopped green Chile. It was really good. I loved this recipe, and my husband loved it too! ** as a topper I added some thin tortilla strips along with cilantro.

    My edits: I used rotel Mexican Style with cilantro & lime. I also purรฉed the rotel cause I donโ€™t like chunks of tomatoes. Used one lb deer burger & one lb sausage. I used the stir-in paste Cilantro. Added more taco seasoning. Garnished with fresh squeezed lime juice & cheese.

    Neufchรขtel cheese (shown in picture) is used and should probably be listed in the ingredients list. It is way less carbs than regular cream cheese. That being said, I loved this recipe and so did my family. I used Salsa Style tomatoes instead of the Rotel brand toms/chilies and it was super good. I will definitely make this again!
    I cant wait to try it with ground turkey.

  30. I’m just curious about the texture of this soup. At the beginning of the video, the texture looks much thicker and cheesier than the end product from the slow cooker which is ‘watery’. Why do the textures different? The thicker version looks delish! ๐Ÿ™‚

  31. When you figure in the nutritional value per serving, I am presuming the cheese isn’t figured in? When I calculate the ingredients in Carb Manager, with everything to be divided over 8 servings I come up with 8g net carbs (11 total), 4 grams fiber, 38 grams of protein, 42 grams of fat, and 572 calories. I’m not fussing, it looks absolutely delicious. I’m just a stickler about tracking and wanted to figure out where/how my calculations ended up being so different from those listed above. Thank you!

    Oh my god we love this soup! ๐Ÿฅฃ This is my third time making it in probably 6 weeks. Itโ€™s that good. We use hot sausage and ground Turkey, as well as hot rotel. So good!

  34. A little confused here. It says use adobo OR taco seasoning. But then in the directions it says both. I wanted to use the adobo for both the meat and crockpot, so do I do the 1/2 TBSP in meat then 1/2 TBSP in crockpot?

    1. Yes. Sorry, I will clean those directions up. I use half in the meat and then half in the soup. So yes, roughly a half tablespoon in both places. I then taste to make sure I don’t need more seasoning for my liking.

    1. It definitely can be made stove top. I love the make it and forget it approach so I can leave the house and know it will be ready when I get home.

    Wonderful recipe! I use packaged mild taco packet, precooked breakfast sausage cut into small pieces, regular canned tomatoes and lo-sodium chicken stock – we love the result (and, it’s easy – I’m not much of a cook and I can make this successfully).

    Tried this tonight and it was absolutely amazingโ€ฆ Iโ€™m still iffy on if itโ€™s keto or not ๐Ÿ˜‚ I added everything up in the keto calculator and 2 cups apparently was 5.7 ish carbs? Idkโ€ฆbut itโ€™s freakin delicious.

  39. I added 3 bell peppers, and a can of black beans, because I wanted some veggies in this. Itโ€™s incredibly mild, considering I used all of the recommended ancho chili powder and an entire packet of taco seasoning. I would probably only use one package of cream cheese in the future, so that it could be spicier. Iโ€™m also topping it with some avocado and Mexican cheese, which is a nice way to cut spice after the fact. Still not sure how to get it some extra spice for this batch, but will probably try adding some cholula hot sauce.

    This was so good. I brought to over to a friend’s get-together. They loved it. I made it just as the recipe outlined. The only thing I did additionally was put it in the blender as the cream cheese didn’t melt all the way. It made it more of a creamy texture. Will make it again.

    Yumm! Tried this tonight and ended up using 2 (14oz) cans of rotel since that was what the store had for off-brand. Since we’re doing keto, future batches will just use 1 (14 oz) can. I can say this was suuuuper good though and I’m excited for leftovers! After I made the recipe I saw the additional notes so going to try adding some chili pepper flakes and see how it is to spice it up, though we were happy with how the recipe is as written.
