It has officially happened. I have had a major freezer day thanks to the help and encouragement of Cris over at GOODEness Gracious. I have to admit, I was scared I couldn't do a major day of meal making. But, with the first one down, I call it success.
I can't say that I made a final decision on what I was making until I was living in the moment. I started with 10 pounds of ground meat (6 pounds beef and 4 pounds pork), chicken breast, chicken drumsticks, and pork chops all ready for action. Here is what I ended up with when it was all said and done.
Tater Tot Casserole
Hamburger Noodle Bake
Chicken Tortellini
Chicken on Rice
Beef Stroganoff
Colorful Chicken Casserole
Taco Meat
Marinated Chicken drumsticks
All in all, I have 17 potential meals in the freezer. The next few weeks just got considerably easier. Recipes and reviews coming as we eat. Hoping for yummy dividends.

I love this idea Leah. I prepare and freeze meals ahead of time but never at such a high volume like you did today. Now I have a goal! I just need a Saturday at home to do it.

Katie you can so do it. It takes deciding what you are going to make, enough pans and freezer space to store it and a lot of dish soap!! I hope now I remember to get them out of the freezer.

I read about a group of women who do dinner trades. For example, I would make up a ton of meals of one certain type such as tuscan soup. You would be in charge of Tator tot casserole. Heather would do a pork recipe... then at the end, we all traded meals so we had a variety. Maybe we should start our own group!
