Hunk of Meat Monday: Roasted Red Pepper Pork Chops

I don’t know about any of you out there, but on a random Monday night I need a meal that isn’t going to take an hour in the oven. Otherwise it might be bed time before we actually eat. Hence the reason I love my Pampered Chef Deep Covered Baker for Oven and Microwave. Yes, I said microwave.

This came out of the microwave and ready to eat after only 15 minutes.

I started with four pork chops that I threw in the fridge before work.

Add some spice to ’em. Some of my essentials.

I put season salt on both side of the pork chops and then placed in the baker.

I added about 6 shakes of chipotle Tabasco and 3-4 shakes of liquid smoke to a half a jar of roasted red pepper and onion relish. This came from one of those kitchen stores. Harry and David’s pepper and onion relish would work well also!

I minced two garlic cloves and a shallot. Because really is there such a thing as too much onion?

Mix together and pour over pork chops in the baker.

Pop it in the microwave for 15 minutes with the lid on top.

And viola!

While the pork chops were cooking I tossed some potato wedges in the oven and made Mexican corn with black beans. Dinner is served in less than 30 minutes!

  1. I've been looking at the bakers for a while now, but I've always been concerned with how the meat would turn out cooking it in the microwave. Sounds like maybe I should give it a try; your chops look great!

  3. I have one of those bakers sitting in my cabinet right now (same color too!) This looks delicious, I'll definitely be using it to make that dish.
