I love this recipe for a change-up from a traditional pot roast or my favorite beef roast recipe, Italian beef. The leftovers are also versatile for many recipes.

Balsamic Beef Roast Ingredients
If any of you are like me, you get beef 400 pounds at a time. Which means you get enough roasts to feed the entire church potluck crowd all winter long. So, once again I have a slow cooked beef roast. This time I used a rolled rump roast to make balsamic beef roast. The ingredients are fairly standard.
- Beef Roast - Chuck, rump, or arm beef roasts are all good for this recipe.
- Beef broth - Traditional beef broth or a combination of better than bouillon and water will work as well.
- Balsamic vinegar - A good balsamic vinegar is necessary for this recipe. Not balsamic salad dressing.
- Soy Sauce - The soy sauce adds flavor and salt. This recipe does not taste like an asian inspired recipe at all in nature.
- Worcestershire Sauce - A beef recipe has to have Worcestershire sauce in it. This is a rule I made up.
- Honey - sweet and heat are both in this recipe. Honey brings the sweet. Maple syrup or brown sugar can be substituted.
- Red pepper flakes - and here is the heat. Any temperature of pepper flakes will work.
- Garlic - fresh, minced garlic cloves are best.
- Salt & Pepper - cracked fresh pepper is my preference.
I guess those are standard in my house. And as a tangent, I buy some pretty awesome balsamic vinegar from T.J. Maxx. And cheap too.
How to Make Crock Pot Balsamic Beef Roast
Start by seasoning your beef chuck roast generously with salt and pepper on all sides. This will help to enhance the flavor of the meat as it cooks. Then, In a bowl, whisk together the beef broth, balsamic vinegar, Worcestershire sauce, soy sauce, honey, red pepper flakes, and minced garlic.
Pour the balsamic glaze over top of the beef roast in the crock pot. Then hit generously with some fresh cracked pepper.
Cover the slow cooker with the lid and set it to cook on low for 8-10 hours or on high for 4-6 hours. The slow cooking process will break down the tough fibers in the beef, resulting in a tender and juicy roast that's full of flavor.
Once the roast is cooked to perfection, remove it from the slow cooker and let it rest for a few minutes before slicing.
The reserve juices in the crock pot can be used as an au jus sauce or thickened up for a gravy. Regardless, don't just pour that liquid brown gold down the drain. Serve the beef with the tender vegetables and a generous balsamic sauce drizzle from the slow cooker. Pair with a side of crusty bread to soak up all the delicious juices!
When I called home to see how everyone liked the roast that night since I was away on business, my husband said our daughter ate her weight in meat. Big win, since she would take a plate of peas over meat most nights!!
Top Tip
If you prefer a thicker sauce, remove the beef and vegetables from the slow cooker and transfer the liquid to a saucepan. Simmer over medium heat until it reduces to your desired consistency.
Variations to Balsamic Beef Roast
While the classic Crock Pot Balsamic Beef Roast recipe is delicious on its own, there are many ways you can customize and enhance it to suit your taste preferences or to add some variety. Here are some fantastic variations to consider:
- Wine and Herb Variation: Replace half of the beef broth with red wine for a richer, more robust flavor. Add mushrooms to the crock pot to make it a tender beef roast and mushroom dinner.
- Asian-Inspired Variation: Use soy sauce as the primary salty component and add 2 tablespoons of hoisin sauce for sweetness. For an aromatic twist, add 1 tablespoon of grated ginger and 1-2 star anise pods. Include vegetables like bok choy, baby corn, and bell peppers.
- Italian-Inspired Variation: For a richer tomato flavor, add a packet of Italian seasoning, a can of diced tomatoes (with juice), and a splash of balsamic glaze. Include vegetables like bell peppers, zucchini, and mushrooms. Check out the recipe for my Italian beef roast.

Slow Cooked Balsamic Beef Roast
Ingredients
- 3-4 pound roast beef
- 1 cup beef broth
- ยฝ cup balsamic vinegar
- 2 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon red pepper flakes
- 4 garlic cloves minced
- Fresh Ground Pepper
Instructions
- Put your beef roast into the crock pot.
- In a 2-cup measuring cup, mix together all remaining ingredients. Pour over roast beef, sprinkle fresh ground pepper over top of the beef roast.
- Cook on high for 4-6 hours or low for 8-10 hours.
- When roast has cooked, remove from the crock pot and cut the roast or break apart with a large fork. Pour ¼ – ½ cup of juice from the crock pot over the beef roast.

I would use the roas thawed because if you don't the amount of cook time will increase.

I would do this just like a roast in the oven, 300 degrees for an hour per pound of the roast.
