We love ground beef recipes. They are hearty for the swimmer and quick to make for mom. Being on a low carb diet makes having casseroles a challenge. I am constantly looking for ways to make keto recipes for my husband and me yet having hearty meals for the kids. One of the things I do is just make sure I have prebrowned hamburger either thanks to the crock pot or brown up multiple pounds when I am making some for a recipe. That is just what I did for this Keto Mushroom Swiss Burger Casserole recipe.
Keto Mushroom Swiss Burger Casserole Ingredients
Simple ingredients keep eating gluten-free, low carb or keto easy. The inspiration for this cheeseburger casserole was this bacon cheeseburger casserole. This recipe is the perfect example of this. No need for elaborate ingredients. Simple ingredients like ground beef, cheese, mushrooms, butter, eggs, cream cheese, cream, mustard, and seasonings.
How to make a low-carb ground beef casserole
Brown the hamburger with steak or burger seasoning and Worcestershire sauce and saute the mushrooms with butter. I like to break apart my hamburger with a handy dandy mix and chop masher. It keeps the hamburger nice and small.
When the mushrooms and beef are cooked, mix together the cream cheese, eggs, swiss cheese, mustard, and heavy whipping cream. I use a block Swiss cheese and shred it. Maybe there is preshredded Swiss cheese somewhere, but I can't find it.
Begin layering the keto mushroom swiss burger casserole by putting the cooked ground beef in an 8" x 8" casserole dish. Then follow the beef with the sauteed mushrooms. Pour the egg mixture over the top of the meat and mushrooms. Finally, top off with the remaining Swiss cheese.
Bake the keto mushroom swiss burger casserole for 15-20 minutes on 350 degrees. It will be bubbly and begin turning golden brown when it is done.
The results were so amazing, I could not shovel each bite to my mouth fast enough. Be warned there is going to be some juice in the bottom of the pan. But it won't matter.

Keto Mushroom Swiss Burger Casserole
Ingredients
- 1 pound ground beef
- 2 tablespoons Worcestershire sauce
- 1 tablespoon steak or burger seasoning
- 8 ounces button mushrooms, sliced
- 2 tablespoons butter
- ยฝ cup heavy whipping cream
- 2 whole eggs
- 2 cups shredded Swiss Cheese
- 2 ounces cream cheese
- 2 tablespoons mustard
Instructions
- Brown the ground beef with the Worcestershire sauce and steak seasoning. In another pan, saute the mushrooms in the butter.
- While the beef and mushrooms cook, mix together the heavy whipping cream, eggs, 1 cup of Swiss Cheese, cream cheese and mustard.
- Make the casserole by layering the ground beef in the bottom of the 8" X 8" casserole pan. Next, layer the mushrooms.
- Then pour the egg mixture over the mushrooms and beef. Top off with the remaining cup of Swiss Cheese.
- Bake for 15 to 20 minutes on 350 degrees.

Family loved this. Sauteed onions with the mushrooms. I live in a small town with a small town grocery store and wouldn't you know they don't carry block swiss cheese. I had to improvise with pepper jack and mozzarella... its definitely a keeper.

Excellent. Hit a little heavy with the steak seasoning, but will definitely add this to my mea plan. Tweak it to individual taste and itโs great. Will be trying more of these recipes.

Yum. I replaced the Worcestershire sauce with coconut amino acid and a little bit of coconut teriyaki sauce. I cooked the beef with white onions, then placed in the casserole dish, then cooked the mushrooms and butter in the same pan (less cleaning). Put that on top of the beef and mixed the egg, heavy cream and mustard together and poured over. Topped with swiss cheese slices and shredded mozzarella. I didn't have the cream cheese at home. I added a bit of pickled jalapenos and sprinkled with a bit of garlic powder. So good. Definatly making again.

This is a REALLY good starting point for a recipe. I doubled it up to have enough for the week. I used ground turkey instead. Then I cut up and (in slivers) added a small onion in with the mushrooms to cook. I then added the 4 tbsp (since it was doubled) worchester sauce to the meat and added a little over the mushrooms and onions. I also put steak seasoning on both (maybe split the 2 tbsp between the 2? I didnโt measure). I spooned the meat into the glass baking dish (leaving the liquid in the pan) and then added the mushrooms (adding the liquid) and mixed them together. Then I added the egg mixture and also mixed that in. Then I topped with cheese and it was heavenly! Thanks!

Good dish! Keeping this one for its ease, flavor and keto friendliness! I did have to cook it much longer than recipe recommended so that the egg/cheese sauce cooked and setup to form a breadlike topping. Cooked it until topping was quiche like firm and lighted browned and that made a big difference! Also added cayenne pepper to taste at serving- In also added caramelized onion. I can see jalapeรฑos or jalapeรฑos powder and bacon being a good topping as well! Think whatever youโd like on your Swiss mushroom burger. Good stuff!
