If you are looking for a bread recipe that is like your grandma's, then this old fashioned pumpkin bread recipe is the one you have been looking for.
  • Flour – Traditional flour is just fine for this recipe. Whatever flour you would use to make cookies you can use in this bread recipe.
  • Salt – Even though this is a sweet recipe, salt brings the sweetness out.
  • Baking Powder – In order to make this bread rise you need some baking powder.
  • Baking Soda – More rising of the bread means more soda.
  • Cinnamon – Pumpkin needs cinnamon. It is a must.
  • Nutmeg – Now, I don’t need a ton of nutmeg, but a little is just enough to make this bread so good.
  • Cloves – A little cloves goes a long way. Just a little pinch.
  • Pumpkin – Canned pumpkin works best for this, but feel free to make your own pumpkin puree with fresh pumpkin.
  • Sugar – White and Brown Sugar both are needed in this recipe. Brown sugar gives this recipe richness.
  • Butter – Room temperature butter is best for creaming with sugar and that is just what you will be doing.
  • Eggs – Just like the butter, eggs at room temperature are best.
  • Vanilla – Vanilla extract to compliment the pumpkin and spice combination.
  • Chocolate Chips – These are completely opional. But they do make great pumpkin chocolate chip bread.

Variations to Pumpkin Bread

This old-fashioned pumpkin bread recipe can be the base for several variations of pumpkin bread. Here are some ideas beyond just adding chocolate chips to the pumpkin bread.

  • Cream Cheese Icing – Want a pumpkin loaf with cream cheese icing? Combine two ounces of softened cream cheese, two tablespoons softened butter, 3/4 cup of powder sugar, and a teaspoon of vanilla. Spread over the bread once it has cooled.
  • Cream Cheese Filled Pumpkin Bread – To make cream cheese pumpkin bread, mix a block of cream cheese, 1/2 cup sugar, 1 egg, and 1 teaspoon of vanilla together. Pour half the pumpkin bread mix into the bottom of the loaf pans. Then spread the cream cheese mixture over the pumpkin mix. Finally, top off with the remaining pumpkin mixture.
  • Pumpkin Muffins – If you want to make pumpkin muffins instead of bread, fill pumpkin muffin tins with cupcake liners 3/4 full. Bake for 20 minutes.

FAQ

Why did my pumpkin bread turn out rubbery?

If you added too much pumpkin or not enough flour, your pumpkin bread could be rubbery. Over mixing the bread can also make it have a rubbery texture.

Why is my pumpkin loaf dry?

Overmixing can affect your pumpkin bread dough by pushing in too much air and causing extra gluten production, both things that can lead to gummy, dried out batter.
