My favorite way to preserve so many fresh vegetables is by pickling them. From cucumbers for pickles to banana pepper rings, I love pickled vegetables. Since we are so obsessed with tacos all year, I have also started pickling red onions for toppings and spicy pickled radishes. Perfect as a tangy topping for tacos, a crunchy addition to salads, or even a flavorful snack, these spicy pickled radishes will surely add a spicy kick to your meals. These spicy quick pickled radishes are so easy to make with this refrigerator pickling method that leaves the radishes crisp.
I was definitely influenced for this pickled radish recipe because I combine radishes with my pickled red onions. These were so good that I had to make a whole jar of pickled radishes with just a few pickled onions in the radishes.

Ingredients for Spicy Pickled Radishes
To make these spicy pickled radishes, you will need the following ingredients:
- 1 bunch radishes - About 10-12 thinly sliced radishes will fill a pint jar
- white wine vinegar
- granulated sugar
- Sea salt
- red pepper flakes
- jalapeño, thinly sliced (optional for extra heat)
- garlic cloves, peeled and smashed
- Red onions
- black peppercorns
- Water

Instructions - How to Make Quick Pickled Radishes
To begin making the pickled radishes by washing all the vegetables.
- Step 1: Slice the radishes thinly using a mandoline or a sharp knife. If your radishes are particularly large, consider cutting them in half before slicing them to ensure even pickling.
- Step 2: Slice the onions, jalapenos, and garlic to be combined with the radishes.
- Step 3: Pack the jars by layering the sliced radishes, onions, and jalapenos. Top off with the sliced garlic.
- Step 4: Finally, add the spices, including the black peppercorns, red pepper flakes, salt, and sugar.
Then, pour the white wine vinegar over the vegetables to make the brine. Fill the jar half full and then top off with water. Screw the lid on the mason jar. Shake the jar to dissolve the sugar and salt into the water and vinegar. Pop the jar of spicy pickle radishes in the fridge. This is all you have to do to make these quick pickle radishes.
Hint: You can also make the brine solution by combining the vinegar, water, spices, and sugar on the stovetop in a small saucepan to bring to a boil. When the sugar and salt are dissolved, remove from heat, and let cool before pouring over the radishes.

Refrigerator Spicy Pickled Radishes Recipe
Ingredients
- 10 radishes
- 1 jalapenos
- ½ red onions
- 2 cloves garlic
- 1 teaspoon sea salt
- 1 tablespoon sugar
- 1 teaspoon peppercorns
- ½ teaspoon red pepper flakes
- 1 cup white wine vinegar
- 1 cup water
Instructions
- Slice the radishes with a mandoline with the thinnest thickness. Slice the onions with the thinnest setting and the jalapenos with the thickest setting or a knife. Slice or chop the garlic.
- Layer the onions, radishes and peppers into the jars. Top off with the sliced garlic.
- Top with salt, sugar, red pepper flakes, and peppercorns.
- Then pour white wine vinegar until the jar is ยฝ full.
- Fill the remainder of the mason jar with water. Shake to dissolve the sugar and salt.
- Refrigerate for at least 24 hours.
