Spring Break Snacks: Cheerio Bars

It is never too early to start planning for spring break. When you have spent time staring at the likes of this, you have to start planning or the seasonal depression will take over!DSC_0131DSC_0132DSC_0136DSC_0137Luckily, we got a pre-spring break in to Florida for a young farmer leadership conference. I know, poor us. Orlando in the beginning of February. Can you believe we couldn’t stop sweating the first day and it was only in the 70’s!

Before we left though, I knew we would need snacks for the kiddos on the plane, on the way to the hotel, on the way to our room. Well you get it. And since I wanted it to be somewhat nutritious, I decided I would make some cereal bars. And the cereal I had was Cheerios.DSC_0199Main ingredients…1 cup brown sugar, 1 cup of corn syrup, 1/2 cup of peanut butter, 7 cups of cheerios and 1/2 cup mini chocolate chips.DSC_0201Combine the sugar and syrup over low heat until it just beginnings to boil. DSC_0204I might add a tablespoon or two of honey. Not necessary, just my little love of combining peanut butter and honey.DSC_0206Once the boil has begun, kill the heat and add 1 1/2 cup of peanut butter. DSC_0208Stir until completely blended. Then grab your cheerios.DSC_0207Pour the peanut butter over cheerios and mix together. Pour mixture into a 13 x 9 pan. Don’t press down yet!DSC_0210Remember those mini chocolate chips? Well, I store mine in the freezer MOST of the time. So when I started making these, I threw my bag in the freezer. The reason? This is a hot mixture. We are going to be traveling with these bars. If I melt the chocolate and pour over the bars, it will be yummy. And MESSY! So instead, I stir the chocolate into the bars. Hence the reason frozen would make the chips less likely to melt.DSC_0211Mine melted! But don’t they look yummy?DSC_0290These freeze well, so before you leave, pop ‘em in the freezer over night. Helps them last longer while you travel too. These were life savers. Kept the tummies full and were clean to eat on the plane. Double win for mom! DSC_0218We were even smiling when we got off the plane in sunny Orlando!

  1. Summer Sausage, crackers, cheese block, grapes, and something with chocolate in it. Nice ice sculpture out in your front yard! Geez!
