Ingredients
The best steak seasoning is a combination of fresh herbs, savory steakhouse seasoning, and butter.
- Ribeye or New York strip steaks - Start with high-quality steaks. Ribeye and New York strip cuts are excellent choices because of their marbling, which adds flavor and tenderness. We have also used this technique for filet mignons and bone-in t-bone steaks. This method works for sirloin steaks too. Ensure the steaks are about 1 ½ inches thick for even cooking.
- Butter
- Steak seasoning - We are obsessed with the savory steakhouse seasoning because it has larger grains of salt and pepper along with garlic, onion, and red pepper. It is the best steak seasoning.
- Fresh Herbs - fresh rosemary, thyme, or parsley, chopped (or 1 teaspoon dried)

Instructions - How to Make the Best Grilled Steaks
1. Choose the Right Steak
Select high-quality, well-marbled steaks. Ribeye and New York strip cuts are excellent choices for grilling because of their rich flavor and tenderness. Make sure the steaks are about 1.5 inches thick for optimal grilling results.
2. Preheat the Grill
Preheat your grill to high heat (about 450-500°F or 230-260°C). Clean the grates thoroughly. Some people swear by oiling the grates with a paper towel soaked in vegetable oil to prevent sticking. We only have a Big Green Egg so these steaks are made on a charcoal grill but the same cooking method could be used on a gas grill too.
3. Prepare the Steaks
Allow the steaks to sit at room temperature for about 20-30 minutes before grilling. This helps them cook more evenly.
Place the steaks directly over the high-heat side of the grill. Sear them for about 2-3 minutes per side with the lid closed. This will give them a beautiful crust. I do not season the steaks before placing them on the grill.
4. Grilling the Steaks
After searing, move the steaks to the medium-heat side of the grill. Close the lid and continue cooking for approximately 5-7 minutes for medium-rare, or adjust the time for your preferred level of doneness.
Prepare your cutting board by placing thin pats of butter, steak seasoning, and fresh herbs on the board to place the steaks onto for them to rest. Reserve additional butter, herbs, and seasoning for the top of the steaks.
5. Resting and Seasoning your Steaks
Remove the steaks from the grill and let them rest for about 5 minutes on a cutting board. This allows the juices to be redistributed and ensures a juicy, tender steak.
Slice the grilled steak against the grain, which helps ensure tenderness. Serve immediately, and enjoy the delicious, perfectly grilled steak!
Hint: Use an instant-read meat thermometer to check the steak's internal temperature, aiming for the desired doneness.
- Rare: 2-3 minutes per side (internal temperature of 125°F or 52°C)
- Medium-Rare: 5-7 minutes per side (internal temperature of 135°F or 57°C)
- Medium: 7-9 minutes per side (internal temperature of 145°F or 63°C)
- Medium-Well: 9-11 minutes per side (internal temperature of 150°F or 66°C)
- Well-Done: 11+ minutes per side (internal temperature of 160°F or 71°C)

Leftover steak is great for steak sandwiches. Store the leftovers in a zipper baggie or air tight container.

Ingredients
- 2 ribeye T-Bone, filets, or New York Strip steaks, an inch and a half or thicker
- 2 teaspoons steak seasoning
- 2 tablespoons butter
- fresh herbs rosemary, thyme, or parsley
Instructions
- Set steaks out of the fridge for 15-30 minutes prior to preparing to make steak.
- Preheat the grill to 400-500℉.
- Place the steaks on the hot grill grates. For a perfect medium-rare steak, grill for about 4-5 minutes on one side without moving them. This creates a beautiful sear.
- Flip the steaks and grill for another 4-5 minutes on the other side. Adjust the cooking time to your desired level of doneness: 3-4 minutes for rare, 6-7 minutes for medium, and 8-10 minutes for well-done.
- As the steaks finish, prepare a cutting board by putting the cut fresh herbs, steak seasoning, and slices of butter on the board.
- Pull the steaks off the grill. Place on the prepped cutting board. Place more butter on the steak along with steak seasoning and herbs, Let rest for five minutes before eating.
